  1. Well it is all about who you know not really what you know. Timing is just as important. Be ready to take a wine and food test the same day you fill out an application. Know different varietals of wine and some general tasting notes of the big six. Know different cuts of meat what they are and how they look.

    I have been in fine dining for about 10 years now and all I can say is that it really is about who you know. Lie on your application. Give yourself extensive fine dining experience. No one ever checks. Managers all think that they are the best and can tell if someone will be a good employee rather than taking the time to call for a reference.

    Never start as a hostess if you want to serve at an upscale place. They will never move you up because you have no serving experience and you have to have that to work in a fine dining atmosphere.

  2. Almost as you would a casual dining place.

    Have a resume & references readily available.

    If you have wine knowledge, french & american serving training, list that.

    Include restaurant programs such as: Aloha, Micros, Digital Dining, OpenTable, etc.

    List any training you have such as T.I.P.S. certification (drinking awareness programs.) It's rare that you get drunkards in fine dining though.

    List any foreign or sign languages you know. They are super helpful with out of town guests.

    List that you have proper protocol skills

    If you're applying online, I think you should include references right away.
