Question:

How do u cook London Broil Steak on top of stove in frying pan instead of using the oven?

Being that the weather is hot i don't want to use the oven or outside grill.

  1. If the steak isn't very thick, you can just saute or sear it with no problem to your desired amount of doneness.  I'm a bit of a purist when it comes to steak so I only season with salt and pepper.

    If the steak is thick, you're not going to be able to cook it properly without an oven unless you cook it in some kind of sauce.  The reason bing that a thick steak will finish cooking on the outside before the middle is even done and then you'll have tough and dry or, God forbid, burnt outside and raw inside.

    But you can cut down on oven time by searing the steak on both sides first and then putting in the oven to finish cooking.  Because the steak is not sitting directly on the source of the heat in the oven as it is in a pan, the heat can better reach the center of the meat without burning the outside.

    An alternative is to slice a thick steak across the grain while it's still raw and cook the pieces in the pan.  I do this for steak caesar salads.

    I would just cook it as a pot roast. The only difference its on the stove.
