  2. DAL MAKHANI

    Ingredients:

    1/2 cup whole black lentils and a handful of dried red kidney beans, soaked overnight

    1 large onion, finely chopped

    1 medium-sized tomato, finely chopped

    2-3 cloves of garlic

    1 tbsp ginger-garlic paste

    1 tbsp tomato paste

    2 tbsp milk

    1/2 tsp red chili powder

    1 tbsp butter

    2 tbsp cooking oil

    fresh coriander leaves, chopped for garnish

    water, as needed

    salt, to taste

    HEAT oil in a pressure cooker and saute onions till lightly browned. Stir in salt, chilli powder, ginger-garlic paste, and tomato paste and fry for a few seconds.

    ADD in the chopped tomatoes and cook for a few minutes to combine well. Add lentils and beans, and enough water to cover them. Pressure cook for 15-20 minutes till lentils are soft and done. Stir in milk and let it come to a boil.

    IN a separate pan, make a tempering by heating butter and whole garlic cloves slit in the middle. Stir the tempering into the lentils and garnish with fresh coriander leaves.

    SERVE warm with soft, fluffy naans.

  6. Dal Makhani Recipe

    Ingredients:

    • 1 Cup Whole Urad Dal

    • 1 Tbsp Red Kidney Beans

    • 1 Onion

    • 1 Tomato

    • 1" Ginger Piece

    • 4 Green Chilies

    • Coriander Leaves

    • 2 Flakes Garlic Paste

    • ½ Cup Stirred Curd

    • ½ Cup Fresh Stirred Cream

    • 2 Tbsp Butter

    • ½ Tsp Mustard Seeds

    • 1 Tsp Cumin Seeds

    • ½ Tsp Turmeric Powder

    • ½ Tsp Garam Masala

    • Red Chili Powder

    • ½ Tsp Coriander Powder

    • Salt to Taste

    Method:

    • Soak kidney beans in water overnight.

    • Add water and little salt and pressure-cook kidney beans and urad dal for 25 minutes.

    • Mash and boil again for 20 minutes and add curd and cream to the dal.

    • In a separate pan, heat oil, splutter mustard seeds

    • Add cumin seeds and garlic paste and fry till they turn light brown.

    • Add onions and fry till they turn pinkish brown.

    • Add ginger, green chilies and tomatoes and fry till tomatoes are soft.

    • Add dry masalas (turmeric powder, chili powder, dhania powder and salt) and fry.

    • Add dal and stir on medium flame.

    • Sprinkle garam masala powder.

    • Garnish with coriander and add butter.
