    1 bag Neutral mousse mix (I use Knorr’s 5.75 oz. – 16 portions)

    3 oz. Grand Marnier

    7 oz. Mandarin orange segments (canned).  Save 4 segments for garnish

    7 oz. Heavy cream or half-and-half

    4 ea.  Maraschino Cherries (for garnish)

             Chantilly Cream (for garnish)

    In a clean mixing bowl, add the four first ingredients, and mix for 1-2 minutes at medium speed.  Scrape bowl, and mix for another 3-5 minutes at high speed until fluffy and the mousse holds it’s peaks.  Fill a pastry bag with a large star tip with the mousse, and pipe in to Martini glasses.  Garnish with Chantilly Cream, one mandarin orange segment and a Maraschino Cherry or a quartered strawberry and perhaps some toasted coconut flakes.
