    Saganaki !

    Saganaki is a salty and aromatic cheese-based Greek appetizer of fried or broiled cheese.

    My friend's grand mother use to make this for us all the time!

    Heres here family recipe-

    ===Ingrediants===

    -8 ounces kasseri cheese ( Greek style fried cheese)(Mozzarella can be substituted )

    -flour (for dredging)

    -3 tablespoons olive oil

    -ouzo

    -1/2 lemon

    -1 tablespoon fresh oregano

    -fresh cherry tomatoes

    -pita bread , wedges

    -kalamata olives

    ===Directions===

    1-Soak the cheese in Ouzo and dredge in flour.

    2-Heat olive oil until almost smoking.

    3-Sauté cheese and brown about 1 minute on each side.

    4-Flame with more Ouzo.

    5-Transfer to serving platter and squeeze lemon juice and sprinkle oregano and salt and pepper.

    6-Serve with pita bread, olives and tomatoes

  3. You need firm cheese (i.e not gouda or Edam) something like kefalotiri (or Gruyere, Regato)

    Cut a 1 cm thick slice (Like the cheese slices you use on sandwiches but much thicker)

    Heat oil in a small frying pan (shallow fry) - lightly beat an egg - coat cheese with plain flour then coat with egg .... followed by flour again. Place cheese in hot pan - cook till golden and then turn - cook till golden ...... serve  immediately - squeeze lemon juice on it (or not ... whichever you prefer). Saganaki goes cold quickly so be sure everyone's ready to eat ... it's not as nice cold.
