  1. @ sea level, water will flash into steam @ 100C.  Sooo, in other words, when you put water into a pot, and you turn on the element, your water will start boiling, or flashing into steam, at the bottom of the pot and since gas is lighter than liquids, it will float to the top and escape into the atmosphere.  It is important for you to point out that you are at see level for your temperature to be accurate.


  2. The solid state of water is ice.

    Water freezes at 0°C (32°F) to form ice. Unlike most other liquids, water expands as it freezes. As you apply heat above 0°C, the ice melts into water. Heating the water to 100°C (212°F) brings the water to boil, producing steam.

    Note that steam is an invisible gas. The mist you see above a boiling pot of water is small water droplets suspended in air that form as the steam cools to room temperature. If you boil water in a tea-pot, and look closely at the tip of the spout you will see a gap. That gap is steam.
