  1. 2

  2. it has to be sealed properly and it has to be in the right kind of container. this means leaving it in a bottle will have taste exactly the same 12 years from now as it did day one. get a guide from your local library they have lots of books on this sort of thing.

  3. don't drink it

  4. just bottle it up and make sure no air can get through!

oh and also make sure the wine is soaking the cork..because once the cork is dry..the wine will go bad

  5. Aging is mainly about eliminating light, shifts in temperature, high temperature, vibration and humidity, which are wine-killers.

Basements are nice because temperature, light and humidity issues can usually be reduced or eliminated. Find a dark, quiet corner and set the bottles on a rack on their sides. You can buy or make racks, just make sure the top of the bottle is slightly below the bottom.

If you don't have a basement, just try and find the spot in your house (or someone you trust's house) to stick the bottle where it's cool and quiet. Under stairs, in a rarely used closet, whatever.

  6. Store it on its side to keep the cork wet and keep it out of direct sunlight and direct heat.

I have a bottle of Baco Noir that the vintner said to not open until 2011. It was good when I had a bottle of it 2 years ago, but he has assured me that the aged bottle will taste much better. I'll buy another bottle in 2011 and try them side by side and find out for sure.

  7. Store it where the temperature will remain fairly constant and cooler than comfortable room temperatures. Bottles with natural cork must be stored on their sides to keep the cork wet.
