How do you be the best waitress at a five star restaurant in L.A.?

  1. Work as hard as you can, show your boss and other customers courtesy and respect, and try not to show that you're nervous. Be sure to keep your cool and everything should go smoothly. I wish you the best of luck!


  2. Finally a person who knows what they are talking about. "answer me" I am referring to "smrardin's" answer.  Perfect response. Read it and follow it well I couldn't have said it better.....from a retired chef....

  3. 1) always take away the 2nd fork if they don't get a salad or appetizer.

    2) be confident when you walk up to the table.

    3) wipe up any crumbs in between courses

    4) learn a couple of wines by the glass that you can tell people about when they ask.

    i.e. The La Crema Chardonnay goes great with the Seabass....It has a nice buttery flavor.

    If you can learn a few good wine adjectives it will help out your guests and your sales.

  5. Be attentive to the customer. Don't bring your problems to work. Smile. Look the customer in the eye. Speak clearly and slow enough to be understood.

  6. NEVER MIND THAT IT IS A 5 STAR RESTAURANT, JUST BE ALERT, PAY ATTENTION TO DETAILS, AND PAY EXTREMELY GOOD ATTENTION TO THE PERSON WHO IS TRAINING YOU. AFTER THAT EVERYTHING ELSE WILL FALL INTO PLACE AND YOU WILL BE AN EXCELLENT WAITSTAFF PERSON, GOOD LUCK!!!!!

  7. Customers at five star restaurants expect service that is also five star. They expect never to have to ask for water or drink refills and to have things like appetizers, coffee and dessert offered at the appropriate time without prompting. Depending on the crowd and the guest, they expect to be treated in a friendly yet professional manner. They do not want interrupted frequently yet they want attentive service.

    Specials of the day should roll easily off of your tongue and you should have a favorite of two prepared in advance in case you are asked for a recommendation. When asked what you recommend, it is a good idea to ask your guest some questions before answering. Things like, "Do you like fish?" or "Do you wish something light or are you famished?" personalize the service and show that you are well-versed in the menu but attuned to your guests' needs and wishes. Asking if they have any questions about the menu or if they wish more time before ordering are also ways to personalize your service.

    Little courtesies like thanking them for their order, making eye contact with each guest as they order, checking back within 5 minutes (or whatever the standard at that restaurant is) to make sure they have everything, checking back 1/2 way through the meal to see if they need more bread or wine are expected at this level of dining.

    When serving a nearby table, you should glance at them once or twice. Make sure to give them long enough to catch your eye in case they need something. However, do not hover too near their table or they will feel you are eavesdropping or too intrusive.

    The key, and the trick, is to make yourself available on a moment's notice but unobtrusive. Being able to give polite and cordial service that is not too familiar is something you will develop over time.

    Of course, it goes without saying that your hair, make up and uniform should be immaculate and professional looking. Any piercings or tattoos should be covered up or removed. Nails should be clean and polished in a French manicure or with a natural looking polish.  Jewelry should be tasteful and in keeping with the overall atmosphere of the restaurant.
