How do you can tomatoes, bell peppers, etc? (Garden Products)?

We have so many tomatoes, bell peppers, peppers, cucumber, etc that are just starting to really grow. How do we can them? Please answer, all answers will be very much appreciated. ;)

  1. There isn't enough space here to list all the steps, equipment, etc. involved.  I would suggest you either look on line for canning recipes or go to the library for a book of canning recipes.  It is very very important to have good directions, as well-meaning folks have become very sick and even died from infections due to improperly canned foods.

    Tomatoes are a good place to start.  They are easy to can, and among the safer choices for a beginner due to high acid content.

    You might also consider freezing - buy heavy duty plastic bags, throw the veggies in boiling water for a minute or two and then freeze.  The parboiling helps them retain their color.  I have done this very sucessfully with tomatoes, onions and peppers.  Much easier :->


  2. Check out the books "Putting Food By" or "Putting It Up with Honey" for some recipes.  Most extension offices have classes.

    Also, don't rule out dehydrating foods.  This works great for tomatoes, peppers and onions, as well as some other veggies.
