  1. I am taking a shot here.  I am guessing that you can steam them or boil them. You can use them in soups and stews.  I'll have to get a hold of a friend of mine in the Philippines and see if she has any recipes


  2. Potato Kamunggay Potage

    Ingredients:

    -a large potato the size of your left hand, peeled and chunked

    -six large garlic cloves crushed

    -a cup of plucked kamunggay leaves

    -any fresh herb (optional)

    -3 cups hot water

    -olive oil

    -salt n pepper to taste

    Directions:  

    Lightly steam the chunks of potato with a sprig of tarragon until al dente.

    While steaming, sautee garlic lightly in olive oil or roast them, if you like, to bring out the aroma. Throw in the steamy potatoes until they sizzle with the garlic. Add hot water and bring to a light boil and turn off the heat.

    Using a hand held blender, zap portions of potatoes until the soup turns thick and creamy. Reserve some chunks of potato for texture.

    Season with salt or pepper.

    Toss in the Kamunggay leaves; Stir slowly and cover. Do this 10 minutes before serving. Otherwise, the leaves will wilt and die.

    Best served in a soup dish.

    Linubihang Munggo

    1 cup dried mung beans

    1½ cups dried dilis (anchovy)

    4 cups water

    3 cups kamunggay leaves

    ¼ cup tomatoes, sliced



    2 tablespoons green onions, chopped

    ½ cup coconut milk, first extract

    2 cups coconut milk, second extract

    1 tablespoon salt

        Heat water until it boils.  Add munggo. Simmer for about half an hour or until tender.  Add dilis, second coconut milk extract, and salt.  Cook for 10 minutes.  Add kamunggay leaves, tomatoes, and onions.  Cook for 4 minutes.  Add first coconut milk extract, and cook for 1 minute more.  Serve hot.
