Question:

How do you cook black rice?

I was recently in Japan and had the most wonderful black rice. I have bought some, but it doesn't open up and become that pretty purple color. I even went out and bought a rice cooker. Any help would be great.

  1. By black rice do you mean wild rice?  This is not really a grain like rice, but rather is a grass.  It's about 1/4 to 1/2 inch long.  It needs to be cooked longer than conventional rice.  Mix 1 part rice to 2 parts water.   Bring water to boil, reduce head and simmer for 40 minutes or until 'rice' opens.  Remove from heat.  If all water not gone, drain it and let it fluff.  Nice tossed with dried cranberries.
