  1. Anything you can do with a pork tenderloin, cuz that's what it is. Check out the recipie webpages for ideas.

HOWEVER, the wild taste of a free hog really screams for the flavors of smoke and charcoal cooking, along with plenty of spice and garlic and if you like a BBQ sauce.

Me, I'd do a spicy Cajun spice rub followed by a smoke session for a couple of hours then finished up over a charcoal grill (rotisserie, or keep rolling it around) and finished with a spicy Texas Pit sauce.

d**n, now you got my mouth watering!

  2. If it were me i'd be thinking Hawaiin . . . Pineapple  . . . Apple . . . sweet potatoes and apple sauce. Think about it, it is just a pig more or less. In Hawaii, back in the day when they threw a luah, they used a wild pig not a domesticated one. In any case here is a recipe for Wild Boar Tenderloin And Shiitake Stroganoff that looks pretty good. And if you take a look at the google search I provided there are a bunch more recipes. I imagine if you do a google search for "pork tenderloin recipes" you'll find a bunch more.

  3. Step 1: Kill wild boar.

Gowing up in Florida, we would have a wild hog hunt at least once a year (Ocala area). We would cook the hog over an open pit on a very large grill/grate. The meat would be cut into relatively small pieces (5-6" chunks) and slow cooked with liberal amounts of BBQ sauce applied the whole time. Wild hog can be tough. I would probably slow cook a tenderloin in a crock pot with carrots, onions, celery , some vineger and other spices.

A: Very well.  That is, well-done!  Barbecue, fry or stew. Season to liking.  Enjoy!
