How do you divide the ingredients for a smaller pan?

I"m making brownies, but the recipe I want to make require a 13x9 inch pan. I only have a 6x6 inch pan, so just dividing it by half wouldn't really work...or would it still be okay?

And if it is okay...how much butter is 3/8 of a cup? How many sticks?

Here's the recipe is somebody can translate it into 6x6 for me...thanks

Ingredients:

* 3/4 cups melted butter

* 1-1/2 cups sugar

* 1-1/2 teaspoon vanilla

* 3 eggs

* 1/2 cup cocoa powder

* 3/4 cups flour

* 1/2 teaspoon baking powder

* 1 teaspoon salt

* 1 cup chopped, toasted nuts

* 1 cup semi-sweet chocolate chips

  1. You could probably use the same recipe, but the brownies will just be thicker and you'll have to cook them a little longer.


  2. You could eaither mix it all together and either measure it out in half or just eye ball it... fill the pan to about half way up.

    or two cut all the ingrediants in half and make the second half while the first is cooking...  

  3. You can divide the recipe by 1/2.

    7/8 cups butter

    3/4 cups sugar

    3/4 teaspoon vanilla

    just use 1 egg

    1/4 cup cocoa powder

    7/8 cup flour

    1/4 teaspoon baking powder

    1/2 teaspoon salt

    1/2 cup nuts

    1/2 cup chocolate chips

    Baking time and prep time will be the same.

    7/8 cup of butter is more than the 3/4 for the regular batch

    you are right with 3/8's

    and I think a stick = half a cup - and there are markings on the

    butter wrapper - to help make the fraction

  6. I wouldn't halve the recipe. Lower your temperature by 50 degree or so, and lengthen the cooking time.

    So bake at 300 degrees for 40 minutes. Because it's a cake-like brownie, you should be able to tell if it's done or not by inserting a toothpick (and it comes out clean) or lightly touching it (and it springs back).

    The way you devide a recipe that fits a known size pan is figure the square inches of that pan

    then figure the sq. inches of your pan

    . then devide that sum into the sq.inches of the known pan. then devide the recipe by that sum.

    confusing isn't it. but it works you can increase  a recipe by multipling  the recipe by the last sum

    The closest I could get in this case was to devide by 3. In a bakery setting it is easier because we use pounds and ounces.

  8. Do it by area or volume. If the pans are the same depth, then you'll want to do this:

    13 x 9 = 117" squared

    6 x 6 = 36" squared

    36/117 = 0.31

    Divide by about one third, lower your cooking temperature, and lengthen cooking time

    Ingredients for the above:

    3/4 = 187.5ml --> 56.25ml or about 4 tablespoons melted butter

    1-1/2 = 375ml --> 125ml or 1/2 cup sugar

    1-1/2 = 7.5ml --> 2.5ml or 1/2 teaspoon vanilla

    3 --> 1 egg

    1/2 = 125ml -->  cup cocoa powder

    3/4 = 187.5ml --> 56.25ml or about 4 tablespoons cups flour

    1/2 = 2.5ml --> 0.75ml or LESS than 1 teaspoon baking powder (a pinch, if you will)

    1 = 5ml --> 1.5ml or about 1/4 teaspoon salt

    1 = 250ml --> 75ml or 1/3 cup chopped, toasted nuts

    1 = 250ml --> 75ml or 1/3 cup semi-sweet chocolate chips

    Just round off the numbers.

    Or, make the original recipe, and divide the results into thirds when you cook it. One third at a time.

    Brownies are fairly fail-proof, so a margin of error is okay.

First question:  a 6x6 pan would be equal to 1/3 of your recipe.  I would make the entire batch of batter and bake it one pan at a time if you do not want to purchase or borrow a bigger pan.  I have also made brownies  designed for a 9 x 13 in an 8x8 pan and they come out a little bit thicker.  

    Second question:  There are 16 Tablespoons of butter in one cup.  Therefore, 3/8 of a cup of butter would be 6 tablespoons.  Generally the sticks of butter have hash marks on the outside of the wrapper.

Very simple really.  If you want to halve the recipe, this is where your math comes in from high school.  3/4 cup melted butter-if you look at the butter that is in quarters, that will be three quarters.  So if you take half of that, think, how do you make half of a quarter?  1/2 of 1/4= 1/8  1 x 1=1, 2x4=8  Do this with each of your ingredients. So it would come out as:

    if you take three quarters of a pound of butter and cut them directly in half you have 6/8 or in half is 3/8.

    3/8 cup melted butter

    3/4 cup sugar   I 1/2 c. = 6/4 divided by 2= 3/4 c.

    3/4 teaspoon vanilla

    2 eggs  Just go ahead with 2 rather than trying to cut it in half and put in about another 1/4 c. flour

    1/4 c. cocoa powder

    3/8 c. flour + a tablespoon slightly rounded

    1/4 t. baking powder

    1/2 t. salt

    1/2 c. chopped nuts

    1/2 c. semi sweet chocolate chips

    See how math does a lot of good now with fractions?
