How do you do a great letter to apply for freelancing for a newspaper? Something catchy. Thanks?

You don't. A newspaper doesn't care that you can write letters - they want to know if you can write newspaper articles!! Write a few stories (remember to fact check and document your sources scrupulously!)  of the type you wish to submit and then write a letter to cover the stories introducing yourself - what geographic area and subject matter you are capable (that is, well-versed) of reporting and submit that... do not just write a letter saying I can write - give me some stories. You can imagine where those letters end up!
