  1. Well, it depends on how it's being served and what type of rice you're dealing with...

    Most asian restaraunts serve their rice in a semi-sticky style which allows it to clump together - which means you can lift hunks of it at a time on top of your chopsticks.

    You'll also notice that most of the time - rice is served in a bowl ... you simply bring the bowl up to your mouth and shovel it in with your chopsticks - this is considered "proper etiquette"

    Stop trying to use your chopsticks like a fork/spoon ... those rules of etiquette for those items don't apply when you're using chopsticks.

Ok, here's a PRACTICAL answer...  I'm assuming you're already reasonably ok with using chopsticks.  Try pressing a little bit of the rice down into the bowl or plate, so it sticks together.  Kinda like packing it down in little bite-sized areas.  Then scoop underneath the part you've packed, so your chopsticks are about parallel and flat.  That's as close as you'll get to being able to "spoon" it into your mouth.  Bite-size is small, but it works.  If the rice isn't sticky enough, use the sauce from the other food to make it stick together -- also makes it tastier.  

    And the previous posters are right -- traditional European or American table manners don't necessarily apply when you're truly trying to experience other cultures.  Don't be afraid to pick up the rice bowl and hold it close to your mouth...  But at the same time, you might keep an eye on your dinner companions to see how they react to this strategy.  If they're comfortable with Asian-style eating, they'll be fine with it.  If not, then it's perfectly acceptable to ask the server for a fork!

  5. You can't, if you are making rice the American way.  You need to buy "sticky rice" or "sushi rice" - a short grained rice, and cook it as directed.  You will get rice that is in clumps that you can pick up with chop sticks.
