Question:

How do you eat your Quinoa? I tried it w/soy butter. Any suggestions floating around out there?

  1. Instead of water I simmer the quinoa in vegetarian vegetable stock.  I add things like asian chili sauce, soy sauce, garlic.

    It calls for a dash of Herbamare, which is just a seasoning mix.  You can use Spike, Mrs. Dash, or regular salt instead.

I usually make my quinoa w/ vegetable bouillon for more flavor (there is a no salt vegan one if you are worried about sodium intake).  I was served fried rice style quinoa at a restaurant and I loved it.  I just throw some fried tofu and veggies and make a whole meal out of it. I find that i don't eat nearly as much if i use quinoa instead of rice, it is more filling and better for you.

    PREP TIME:  15 MINS

    COOK TIME:  15 MINS

    READY IN:  30 MINS

    INGREDIENTS

    1 1/2 cups water, divided

    1/2 cup dried soy chunks (textured vegetable protein)

    1 tablespoon peanut butter

    1 tablespoon canned cream of coconut

    1/2 bird's eye chile, seeded and minced

    1/2 green onion, diced

    1 teaspoon chopped cilantro

    1/2 cup uncooked quinoa

    salt and pepper to taste

    DIRECTIONS

    Boil 1/2 cup water, and pour into a bowl.

    Mix in soy chunks.

    Blend in peanut butter, cream of coconut, chile, green onion, and cilantro.

    Keep warm while the quinoa cooks.

    Bring quinoa and remaining 1 cup water to a boil in a pot. Reduce heat to low, cover, and simmer 15 minutes, until quinoa is fluffy.

    Stir in the soy chunks and peanut butter sauce, and season with salt and pepper to serve.

  5. Quinoa makes a great burrito filling instead of rice.  Just boil it up according to the package instructions and put it inside a tortilla with beans, lettuce, tomatoes, red bell peppers, onions, corn, etc.    At least, that's how we like it best at my house :).  Good luck!

  6. I eat my quinoa with my fave sauteed veggies. I am one of those "just get in the kitchen and start cooking" types, so I don't have a recipe for you (sorry).

    But here's what I do:

    First, I rinse the quinoa. That will take away the bitter taste.

    I drain off that water and add homemade veggie broth to the pot and cook the quinoa as directed.

    In a saucepan, I heat a small amount of canola or olive oil. I add my fave veggies - green onions (+the scallions), marinated artichokes, mushrooms, green peppers, red peppers, carrots, etc. I sautee them for a few minutes until they are just done.

    I combine the two in a bowl and enjoy! I might top the mixture with some tamari or a homemade garlic dressing.

    ::EDIT:: Apres Vous is right! Quinoa does make an excellent stuffing for green peppers!
