The raw fruit, which may be whole or chopped into bits and at various states of ripeness, is mixed with water and the wetted fruit placed in a pressurized heating container such as an autoclave, where the fruit is heated at a predetermined temperature and pressurized at a predetermined pressure for a predetermined period of time so as to extract the fruit. The extracted fruit is then fed to a separator device which separates the extract from the fruit residue. The extract is then concentrated under vacuum to provide a concentrated fruit extract while the residue is discarded.
