How do you harvest horse radish?

  2. it's a root, so dig up a little bit and cut it from the main part without damaging the whole.

    Wash it off well and then use a box grater to grate it up (use the coarse side).

  3. Dig up the root and store it unwashed in a cool place.  If you want to process it right away, wash it, preferably scrubbing with a stiff bristle brush.  Peel it and wash it again to get off any soil taste.  Grind or grate it and mix in a bit of vinegar or lime juice to flavor and help keep it from turning dark, and salt to your taste.  Be careful when grinding, especially with a blender, the fumes can be really strong.
