How do you keep cheese fondue from burning at a party?

I am having a party Friday night and we are serving Cheese fondue. We do Fondue a lot for meals, but I am right there monitoring the heat on the fondue pot (electric). At the party, I dont want to have to stand over the pot and make sure it is not burning. Any suggestions? Do I need to use a different TYPE of fondue pot?

  1. some pots just sit over a candle flame. it keeps it warm without buring.

    if alot of people will be dipping it might not burn since it will be in constant motion


  2. The fondue pot should get stirred once in a while, but fondue pots shouldn't let it burn because they are meant to be slowly enjoyed.

  4. What's most important is choosing the right pot. For cheese fondue you need a ceramic or earthenware pot, not metal, because thick pottery _diffuses_ the heat, and helps prevent the cheese from scorching. Metal _absorbs_ heat and the cheese will burn quickly in a metal pot. Metal is best for deep-fried meat fondues.

    Prepare your fondue on the stove if you wish, then transfer it to ceramic pot, then place the pot on an electric temperature-controlled hot plate. Or you can use a burner unit fueled by alcohol (denatured alcohol, available at hardware stores) or fuel paste (Sterno).

    There are fondue sets that are multi-purpose that have both a s/s pot for meat fondues, plus a ceramic pot insert for cheese and chocolate, if you want to splurge. Here's one:

  6. After the fondue is all the way heated just turn the pot off. Or get a pot where you just light a candle under it and it keeps it warm but not too hot.

  7. just melt it on the stove and get it hot then take it off the stove and bring it to a table and put a candle under it.

  8. if you have a nice one it has fountain and the cheese wont burn because it is moving if it doesn't just tell you're guests to ster it
