if they look big enough to you you pick them.

It depends on what kind they are if they are straight 8's which is usually what is in the stores when they reach that size but NOT larger they are ready.

You can pick them at any stage really.........depends on what type............but the longer they grow .......the more produce you will get.........when the plants start getting dry and the fruit a little yellow...........get the rest off.............if they do get big and yellow you can chip them.........(cucumber chips for burgers and whatever....we used to eat them raw, pickle them, slice them in to salads, chunk them and chip them in pickling brine............have fun.

When they're green and firm and a size that "looks good".  If they start turning yellow, they're getting past their prime.

You can harvest small if you like.  Or make pickles with the baby ones.
