  1. Squids are one of the easiest, fastest sea item to cook; they curled up like prawns, takes 2-3 mins to cook tops!

  2. Well, I don't know about turtle, but the squid should start curling up.

  3. Since you are boiling the squid, I am guessing you are going to use it a cold recipe, such as a seafood salad.  Before you boil the squid, make sure you clean it, then cut it into bite size pieces.  Boil is small batches. Squid should only be boiled about 15-30 seconds -JUST till it turns "whiter" and starts to set up.  Plunge into ice water immediately to stop cooking and keep from getting tough.

At one time Turtle Soup was wildly popular at the infamous Pineapple Hill Restaurant on Maui.  I remember it took about two hours to boil.  Turtle Soup is no longer available as the Sea Turtle is now an endangered species.  Thankfully, their population is returning and what a joy to snorkel with.  (The Pineapple Hill Restaurant has since closed....no relation to the turtle soup.)
