It is fascinating!  Some people learn by literally taking online courses to be certified, or they'll use dream dictionaries (book or online).  

One of the coolest is a Dream Analyzer online at:

where you type in your dream and it decodes many keywords in your dream!

However, there is a site that suggests "If you've been using a dictionary of symbols to help you interpret your dreams, but haven't been getting satisfactory results, it might be time to toss out someone else's symbols and discover your own" and then tells you how.  This can be found at:

You can read books about it.  Try some of the web sites I listed. Hope this helps; but it is very interesting.
