with a spirit level an gentle adjustment of the feet of the table!

You need two levels put them in a tee shape in the middle of the table start with one of the corners that is the lowest and adjust working your way around the table it may take about 15+ minutes to adjust.

on my pool table i take a block of wood and i stick it under a leg but make sure that the block of wood is the right length

We use a machinists level. Begin in the middle of the table with the level lengthwise. Then do each end of the table width wise. Recheck the middle and make minor adjustments.We use a jack made to lift pool tables. Never lift a table from the top , this can damage things. If the table doesn't have leg levelers use small thin wood shims.

At the bar I go to, there's this really really fat bartender.  If the pool tables there were ever uneven, I would just have her roll around on the table top for a while to even it all out.
