  3. Pick up a book by CJJ Berry. It doesn't matter which; they are all for beginners and have the same basic information, just different recipes. I'm rather fond of his lemon wine and his potato wine (although I add amylase to the latter). He explains grape wines too.

  4. Most commercial wine kits are designed to make 5 gallons.  They include grape juice of the variety that you want to make since diferent types of wines actually come from different varieties of grapes.  So my first suggestion would be to make a 5 gal batch instead of 1 gallon.

    If you are set on making 1 gallon and want to make a good wine of a traditional variety, call some of the winaries in your area and see if they would be willing to sell you some grapes or grape juice.  Call arround the time that they are getting ripe.

    If this is more of just an experiment in making wine, go to the store and buy a 1 gal jug of organic 100% concord grape juice.  

    -Order a dry packet of wine yeast from an online homebrew distributer and a small pack of campden tablets.  

    -Pour out some of the grape juice and drink it.  

    -Disolve the yeast in a cup of warm water and add it to the grape juice.  leave it loosley covered at room temperature for about 3 weeks.  

    -Carefully pour out the liquid leaving the yeasty sludge at the bottom of the jug.  

    -Rinse the jug out and put the wine back in.  

    -Crush up a campden tablet and add it to the wine.  This is to kill off the yeast and prevent it from starting to ferment again.  

    -Cover loosely.  

    -After 24 hours, add some suggar to taste.  

    Concord grapes don't make a good dry wine, but as a sweet wine its pretty drinkable.  This isn't a wine that you want to age.  drink it within a month or two.

    1. Get a one gallon container of your choice that will close tightly

    2. Buy 6 bottles of wine (750ml each)

    3. Pour those bottles into the one gallon container.

    4. Drink the leftover wine from the last 750 ml bottle.

    Voila!  One gallon of wine!!
