  1. 1 1/2 lbs. ground beef

    1/2 c. sliced green onions

    1 tbsp. chili powder

    2 (10 oz.) cans enchilada sauce

    1 tsp. garlic salt

    1/4 tsp. pepper

    Cooking oil

    12 corn tortillas

    3/4 lb. shredded Cheddar cheese

    1/2 lb. shredded Monterey Jack cheese

    Sour cream (to serve)

    Cook beef and onions; drain off fat. Add chili powder; cook and stir for 1 minute. Stir in 1 can enchilada sauce, garlic salt, and pepper. Simmer for 20 minutes. In 10 inch skillet heat 2 tablespoons oil. Fry tortillas, one at a time, for 10 seconds or until limp.

    Drain on paper towels. Spoon scant 1/4 cup meat mixture on each tortilla. Sprinkle with cheeses. Fold tortilla sides to overlap; secure with toothpick. Arrange tortillas in large baking dish. Combine remaining meat mixture and can of enchilada sauce; pour over tortillas to cover. Bake, covered at 350 degrees for 20 minutes. Uncover, sprinkle with remaining cheeses and bake 5-10 minutes more. Serve with sour cream. Serves 6-12.


  2. well i will give you the best recipe ever! and it will be good i promise...

    i'm hispanic and this is actually a hispanic dish......

    THIS RECIPE SEEMS LONG BUT I JUST EXPLAIN IT VERY LONG! SORRY !

    you need

                    1 lb grated cheese

                   1lb ground beef

                   1 can cream of mushroom

                    1 dozen corn tortillas

                     square cake pan <deep dish>

    and any seasonings you wish to season the ground meat

    first you ground the meat and season, then drain

    grate your cheese if its not grated yet

    cook your cream of mushroom>  u just need to bring it to a boil      

      - i use half of the can filled w milk and the other half with water

    then you must cook the corn tortillas in oil just so that they get soft.

    let the  oil get hot then dip each corn tortilla in it and put on paper towel and plate to drain...

    or if you dont want all the excess oil on the torillas if you take them out of the package and put on a plate and then cover with a wet paper towel and put in microwave for about 2 in a half minutes they will get soft....

    finally  you put some cream of mushroom at the bottom of your pan and then lay down your tortillas and cover the pan tear them if you want but they dont really have to be corner to corner,.....

    and then put more cream of mushroom and spirnkle cheese and ground meat over them and repeat... add the corn tortillas put the cream of mushroom and then cheese and ground meat until you run out of tortillas.........

    then you cover the top with the remaining cream of mushroom meat and cheese> cover with foil and put in oven for 15 minutes on 250

    THATS THE WAY YOU MAKE A CASSEROLE

    but if you want to do individual ones for like just 2 or 3 people then you

    do the same thing like above minus the pan....

    you can dip the tortilla in the pan of cream of mushroom and then place it on your plate and sprinkle cheese and meat and then dip yor next tortilla and place on plate add your cheese and meat and so forth>

    you use as many tortillas as you want... 3 is pretty good but 4 is also good.

    PS if you like green chile you can buy a can of green chile and add to the cream of mushroom........



    if you like red enchiladas then you do the same just replace the cream of mushroom with the red chile........

    if you dont pick mine you should try it this way its great !! especially if you are having a pot luck or a family get together the casserole comes in handy... if you do end up having it like for a party or get together then you use 2 cans and a pack of the 3 dozen tortillas and 2 lbs cheese ...........

  3. i just get tortillas...fry sum ground beef...melt sum cheese sauce...put ground beef into the tortilla wraps....and put cheese in it too...wrap em up and they ready to go

    INGREDIENTS (Nutrition)

    2 pounds lean ground beef

    1 large chopped onion

    1/8 teaspoon garlic salt

    12 (8 inch) flour tortillas

    2 teaspoons vegetable oil

    8 ounces shredded cheddar

    2 (19 ounce) cans enchilada sauce

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    In a heavy saucepan or skillet, brown the ground beef and onions. Season the ground beef mixture with garlic salt and set aside.

    In a skillet, fry the tortillas in vegetable oil. Spoon some meat mixture and cheese into the center of each tortilla, roll them up and arrange them in a 9x13 inch baking dish or oblong pan. Pour the enchilada sauce over the rolled enchiladas and top with any remaining meat or cheese.

    Bake in the preheated 350 degrees F (175 degrees C) for 20 to 30 minutes.

  7. The amounts you use are totally up to your tastes, so here is the basic method:

    Get some ground beef, an onion, a large can or jar of enchilada sauce, some shredded cheddar cheese, and some small, soft tortillas. Preheat oven to 350 F. Cook the beef with some shopped up onion , salt, and maybe some garlic in a frying pan until the meat is cooked, drain, and then stir in just a little of the enchilada sauce to moisten the meat. Pour a thin layer of the sauce at the bottom of a glass baking dish. Put some meat in each tortilla, top the meat with cheese, fold up the ends of the tortilla and then roll it up. Place the roll in the dish, seam side down. When your glass dish is full, pour the enchilada sauce over the rolls, top with grated cheese, and cook about 20-25 minutes until the sauce is hot and bubbly and the cheese is melted.

    Optional things to try: Sprinkle on a can of chopped green chilis. Add some black beans or roasted corn before rolling the enchiladas. Try a mole sauce instead of an enchilada sauce. Use any combination of cheeses such as monteray jack, cheddar, meunster, etc. Top cooked enchiladas with sour cream, green onions and/or guacamole.

    INGREDIENTS

    1 cup chopped onion

    1 pound sirloin steak, cut into bite size strips

    1 teaspoon minced garlic

    2 (7 ounce) cans diced green chile peppers

    4 cups tomato sauce, divided

    2 teaspoons chili powder

    1 (12 ounce) package corn tortillas

    1/2 cup fresh salsa

    3/4 cup chopped black olives, drained

    2 cups shredded Cheddar cheese

    1/2 cup sour cream

    1/3 cup chopped green onion



    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.

    In a skillet over medium heat, saute onions until almost translucent. Stir in beef, garlic, and chile peppers, and continue cooking until the meat is no longer pink. Pour in the tomato sauce and chili powder. Mix thoroughly and heat through. Remove from heat.

    Spoon a little of the meat mixture into a corn tortilla and add small amounts of salsa, Cheddar cheese and olives. Fold the tortilla up and place in the prepared casserole dish. Repeat for the remaining tortillas using up all of the meat mixture. Reserve 1/2 cup of Cheddar cheese for topping.

    Pour the other half of the tomato sauce and sour cream over all of the tortillas. Top with green onions and 1/2 cup of reserved Cheddar cheese.

    Bake 30 minutes in the preheated oven, or until hot and bubbly.

    Easy Beef and cheese Enchiladas

    Ingredients

    1 pound  Hamburger

    1 can  Cream of mushroom soup

    1 can  Chopped black olives

    12 ounces  Shredded cheese

    1 can  Enchilada sauce (we always use mild but you could use whatever you like)

    10  Flour tortilla's

    Preparation

    Preheat oven to 350 degrees.

    In a large skillet brown hamburger and drain.

    While browning hamburger wrap up a handful of cheese and a sprinkle of black olives in the tortillas and place in a 9X13 pan.

    Add enchillada sauce and cream of mushroom soup to hamburger in skillet and stir until well mixed.

    Pour Hamburger mixture over tortilla's.

    Cover with foil and place in oven for roughly 20 minutes or until cheese is melted.


  9. brown ground beef chop onion fine and put in beef over mid low heat. add a 1/2 packet to a full packet ot taco seasoning. get some enchilada sauce and heat it a pan dip corn tortillias in sauce and place in baking sheetfill with a little beef mixture and cheese (not to full) put sauce over top plus cheese heat in oven till cheese is melted then serve
