How do you make Chinese "bitter melon" taste lose its bitter taste?

  1. Cut the bitter melon in bite size, rug them with some salt lightly, leave for about 10 minutes, wash away the salt then put the bitter melon in a pot of boiling water with a tablespoon of sugar dissolved, risen them for 10 seconds or so!  Then you can stir fry them or make salad.

    I do not eat bitter melon but my dad and my aunts are good at preparing it.


  2. Cut it in 1/2 inch thick rounds and remove the seeds and membrane.  If that's too tricky, cut it in half, scrape the seeds and membrane out, then cut them into 1/2 inch pieces.

    Drop them in boiling water for 2 minutes, drain them, then boil them again in fresh water for another minute or two.

    That will take the edge off the bitterness, but it won't completely remove it,... they are meant to be bitter.

    I stuff the rounds with a seasoned mixture of pork and chopped scallions and cook them until very tender in chicken stock.    If you've just cut in in small pieces, make small meatballs from the pork and drop them in the stock to cook.

    Add some rice noodles at the end and it's a great soup.
