How do you make Nigeria Meat Pie? if possible, Igbo style:-)?

  1. 3.5 cups of flour

    Pinch of baking soda

    Pinch of salt

    2 egg whites

    1 egg yolk

    1/2 pound butter

    1/4 cup waterSauce:

    1 pound ground beef

    3 carrots (not baby carrots)

    1 potato Spices

    Direction:

    Boil ground beef with spices. when fairly cooked, dice the carrots and potato and add to the cooking ground beef. (Diced carrots can be boiled separately from beef and mixed together later). When ready, drain if there is excess water.

    To make the dough mix all the dough ingredients. Continue to knead until consistent. Cover for a few minutes.

    Preheat oven at 450F.

    Roll out dough in circular patterns. Put desired amount of sauce in the middle. Cover and use a fork to close the sides. Use the fork to put two sets of holes in the middle. Lay the meatpie on baking pan that has been greased with butter. Use a brush to apply yolk slightly to the top of the meatpie.

    Reduce the temperature of the oven to 350F and put in pan with meatpies. Bake for 40 mins. Bring out pan when meatpie begins to brown.

    Depending on size, makes 20 "6 inch/15 centimeter diamater" pieces or about 50 "3 inch/7.5 centimeter diamater" pieces

    THE DOUGH:

    6 cups flour

    4 eggs

    1 tablespoon salt

    ½ pound of butter

    1¼ cups water

    1 egg yolk

    THE MEAT MIXTURE:

    16 oz (2 cups or .5 liter) of ground meat

    2 medium-sized potatoes

    Any other desired vegetables.

    Instructions:

    THE DOUGH:

       1. Combine the flour, butter, eggs, water and salt together.

       2. Knead the dough.

       3. Cover the dough and let it rest for 3 hours.

    THE MEAT MIXTURE:

       1. Dice the potatoes into little cubes (about .5 inch or 1 centimeter length).

       2. Place the potatoes, meat, very little water, and any other vegetables and spices into a small saucepan, and cook until the meat is done. You can taste the mixture to see if it is adequate.

    PUTTING IT ALL TOGETHER:

       1. Preheat the oven to 400 degrees.

       2. Roll out some dough...it should not be too thick.

       3. Cut the dough into a circle (use a tool if you want to).

       4. For each 'circle', add a few teaspoons of the mixture in the middle of the circle, then fold the circle over, and use a fork to press the ends together.

       5. Repeat the above steps until you are out of dough, or mixture.

       6. Brush the exterior of all the meat pies with egg yolk.

       7. Place the meat pies on a sheet with a little space in between each one, and bake until slightly brown
