How do you make Spanish rice from scratch?

I love Spanish rice, but I'd love to know how to make it myself.

  2. Ingredients  

    1 tbsp oil

    1 cup rice

    2 cups chicken or vegetable stock

    2 tbsp tomato sauce

    1/2 of an onion, chopped

    2 cloves of garlic, diced

    Salt to taste

    Directions  

    Heat the oil on high in a medium sized frying pan

    Add and fry the rice until it just starts to brown (don't over cook)

    Add the tomato sauce, and stock, stir.

    Add the garlic and onion, stir.

    Reduce heat, cover and simmer until the water cooks off (about 40 minutes) stirring occasionally.

    Add salt to taste.

  4. Ingrediants:

    corn oil

    cooking ham (optional)

    water

    goya sofrito (you can purchase this in the frozen section of any supermarket)

    small size tomato paste

    goya sazon de color with achiote (also purchase in supermarket)

    15.5 oz can of beans (any kind you like: either black, red, chick peas, pink)

    green olives (optional)

    rice

    salt (diamond krystal brand)

    medium or small iron casserole pot (you can purchase in walmart)

    directions:

    turn stove on medium high and then in the casserole pot, pour oil that covers just the bottom portion of the pot (it would be about half cup).

    **Optional***fry small pieces of cooking ham (any amount desired) for about 5 minutes.  Pour 1 cup of water. Stir everything

    Next put 4 tablespoons of sofrito, half can of small size tomato paste, two packets of sazon de color, whole can of beans, and green olives (less than half of jar). Pour another 1/2 water. Stir everything

    Add 4 table spoon of salt (or less depends on your taste).

    Let everything boil for about 10 minutes. Taste broth (should taste a tiny bit salty...not too much not too less)

    With the 15.5 oz can of beans that now should be empty, use that to measure the amount of rice. Pour 3 of the 15.5 oz can of rice into the casserole in the mix. Stir everything.

    Rice should be JUST below water level. If you need more water, add it or if you need to take some away, do so. Make sure that rice is just below water level. Stir.

    Boil until rice is just above water level. Stir everything. Water should be a little dried. Lower heat to medium low. Cover casserole pot with top. Let cook for 30-35 minutes.

    After 30 minutes, stir rice from bottom to top.  Cover and let cook for another 10 minutes.

    After 10 minutes, stir rice and it should be ready to eat.

    I know it sounds complicated but it really isn't. I kinda wish I was there to help you out! Hope you can do it!


  5. Okay, so I take a short cut for this...just add your favorite salsa from the store to plain cooked rice and mix it together! It's fast, simple, and tastes pretty darn good!
