How do you make a good asian stir fry?

so i love chinese food but i'm horrible at making it! what kind of vegetables should i use and what kind of seasoning (teriaki, etc)? oh and should i use the frozen mixes or are those nasty?

  1. add loads of oil (unhealthy but thats the way) and remember the wok has to be hot. FLAMING HOT.


  2. Before you stir fry you need to know the technique first. It's not that hard but you need practice before mastering it. You can use almost any kind of vegie and seasoning. Check out this article, I found it very useful and helpful.

  3. To Melvin C . if you read properly she stated that SHE LOVE CHINESE FOOD .

    get the following:

    Bean sprout,

    Broccoli,

    carrots,

    Snow peas,

    Chineese cabbage .

    ginger, garlic, scallions (finely chopped), salt,pepper, sesame oil .

    Slice carrots, cut broccoli into flowrettes and shread cabbage finely.

    In a hot pot add a little oil , sesame oil, your chopped garic,etc and saute then add raw veggies , salt and pepper to taste, never over cook veggies .prinkle finely cut scallions.

  4. Stir fry is not oily, deep fried is.

    For Chinese stir fry, it can be stir fry vegetables, stir fry meat or stir fry rice with seafood or stir fry Chinese noodles with veg and meat.

    Basic ingredients are:

    1. Finely chopped garlic and ginger

    2. A little oil (use non stick pan if you're health conscious) - sesame or veg oil

    3. Light sauce or oyster sauce or salt and pepper to taste

    4. 3 tbsp water and a tsp cornflour- mix well

    5. Fresh chicken stock - 1/4 cup

    6.Fresh vegetables like bak choy, shredded carrots or broccoli (med size diced), cauliflower (med size diced), carrots and bamboo shoots (optional) - get all these at your local Chinese grocery shops

    Method:

    1. Put in oil heat and add in ginger and garlic (do not burn).

    2. In high heat add in carrots followed by bak choy/chye sim OR broccoli, cauliflower and the rest.

    3. Add a dash of oyster sauce and let it simmer for about 5 mins.

    4. Add in chicken stock and let it simmer until vegetables are cooked, add in cornflour mixture and dish out. (Note: do not over cook bak choy or chye sim, crunchy is just nice)

    Most Chinese do not like frozen vegetables especially the leafy type. Frozen veg lose it taste and vitamins. However, frozen peas and corns are ok

  5. for a great Chinese stir fry .. these are the pure essential ingredient you'll need

    -> oyster sauce

    -> light soya sauce

    ->white fine pepper

    -> Chinese cooking wine/ dry sherry

    Basically : in Chinese cooking everything has to be cut into bite size pieces . meat has to be finely slice . any fresh leafy vegetable can be used.

    direction: cut garlic and ginger into fine diced. meat to be marinated with oyster sauce and light soya sauce ( enough to gently coat it ) .. any veg to be cut into 3 inches lengths. heat up wok(medium), pour 3 table spoon oil,, put in the garlic and ginger, fry for a while( about 10 sec) , put in the meat , fry till cook. add the veg, turn up the heat to high. stir for 3 min or till veg is cook... taste add pepper, Chinese wine (about 1 table spoon only)and light soya sauce for taste.

    try not to buy the frozen stir fried veg.. it taste like overcook veg.YUCK.

If you want to make a good Chinese stir-fry, try going to a Chinese grocery store and buy some mini-bok choys, or Chinese eggplant.  Also, Chinese grocery stores are full of wonderful sauces and seasonings.  If you describe the type of tastes that you are looking for, the staff can guide you to some really good flavors.

  7. Hi hi,

    Asian stretch from Middle East, across the South Asia (India), passes thru Central Asia, to China and Korean.  Slightly further, there is a group of island called Japan.

    To the south, there are Thai, Malay, Indonesia and Phillipines.

    In each region, there are so many ways of cooking.  All have stir fry in one way or another.  Which one are you refering to?

    You have mentioned Chinese and teriaki, which is 2 different stuff.  Chinese do not use the Japanese seasoning.

    Generally, if it is Chinese food you are refering to, add galic (chopped) to fry till slightly brown, add the cut vege and a little of salt will do.  That will be a simple dish.

    If you like, you may add prawn or meat (minced) when the galic turn brown, stir fry till they are cook before you add vege.

    ut of cause, it is easier to get a Chinese wife to do it for you.
