How do you make asian green beans?

the resturaunt I ate them in would only tell us it has ginger in it and they used whole long beans? thanks for helping me out!

  1. If you like Chinese style beans, one thing that Chinese restaurants do that most people don't do at home with green beans is to deep fry them.

    String Beans with Black Bean Sauce:

    What you do is take the beans. Make sure they are nice and dry (wet beans will result in splattering oil) then drop them in hot oil like you would when frying fries. Fry for just 3-4 minutes then pull out and drain. You will notice the outside of the beans will look wrinkly once cooled. Now you heat up the wok on high and put the beans back in. Toss and put a light char on them (gives it good flavor). Add garlic/ black bean mixture (see below), chopped red chillies, soy sauce and a pinch of sugar. Once its mixed well, then its done! Don't over cook it. You want the green beans to have a snap to them.

    Take some fermented black beans and rinse with cold water. Then put in small bowl with minced garlic, salt and a bit of vegetable oil. Crush the black beans and garlic together to make into a coarse paste.


  2. use Joseph's recipe . its good but to make it great and some sesame seeds to the beans just before serving.

  3. I usually cut the long green been about two inches long and stir fry it in hot oil with minched ginger & garlic.  Add a bit of soy sauce and pepper to taste.

  4. Go to an Asian grocery store and ask for "long beans".  Wash them, cut them into pieces, and wok-fry them in sesame oil with a little garlic, freshly grated ginger root, and whatever spices you like... mostly what makes the beans in Chinese or Thai restaurants taste the way they do is the kind of beans they are...
