    Craggy-Topped Fudge Brownies

    Ing:

        * 1 cup granulated sugar

        * 1/2 cup butter or margarine, (1 stick)

        * 2 cups (12-oz. pkg.)semi-sweet chocolate chips, divided

        * 3 large eggs

        * 1 1/3 cups all-purpose flour

        * 1 teaspoon vanilla extract

        * 1/4 teaspoon baking soda

        * 1/3 cup chopped nuts

    Directions:

    PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

    HEAT sugar and butter in medium, heavy-duty saucepan over low heat, stirring until butter is melted. Remove from heat. Add 1 1/4 cups chocolate chips; stir until melted. Stir in eggs. Add flour, vanilla extract and baking soda; stir until flour is incorporated. Spread into prepared baking pan.

    BAKE for 18 to 22 minutes or until wooden pick inserted in center comes out slightly sticky.

    SPRINKLE with remaining chocolate chips and nuts while still hot. Cover with foil; refrigerate until cooled completely.

    White Brownies

    Ing:

        * 8 oz. white baking bar, broken into small pieces

        * 1 1/2 cups all-purpose flour

        * 1/2 teaspoon baking powder

        * 1/4 teaspoon salt

        * 3/4 cup granulated sugar

        * 2 large eggs

        * 2 tablespoons water

        * 1/8 teaspoon almond extract

        * 1/3 cup butter, melted and cooled

        * 1/4 cup sliced almonds

    Directions:

    PREHEAT oven to 350° F. Grease 9-inch-square baking pan.

    MICROWAVE broken baking bars in medium, microwave-safe bowl uncovered, microwave-safe bowl on MEDIUM-HIGH  power for 1 minute; STIR. If pieces retain some of their shape, microwave at additional 10- to 15-second intervals, stirring just until melted. Cool to room temperature.

    COMBINE flour, baking powder and salt in small bowl. Combine sugar, eggs, water and almond extract in large bowl. Add melted baking bars and butter; stir until smooth. Gradually add flour mixture. Pour into prepared baking pan. Sprinkle almonds on top.

    BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.

    Mocha Fudge Brownies

    Ing:

        * 1 cup all-purpose flour

        * 1/2 teaspoon baking powder

        * 1/4 teaspoon salt

        * 6 tablespoons instant coffee granules

        * 1/3 cup water

        * 1 cup granulated sugar

        * 1/2 cup butter or margarine, cut into pieces

        * 1 cup (6 oz.) semi-sweet chocolate chips

        * 3 large eggs

        * 2 tablespoons powdered sugar

    Directions:

    PREHEAT oven to 350° F. Lightly grease a 9-inch square baking pan.

    COMBINE flour, baking powder and salt in a small bowl. Combine instant coffee and water in a medium saucepan; stir until coffee is dissolved. Add granulated sugar and butter. Cook over medium heat, stirring frequently, until mixture comes to a boil. Remove from heat; stir in chocolate chips until smooth. Add eggs, one at a time, beating well after each addition. Stir in flour mixture. Pour into prepared baking pan.

    BAKE for 30 to 35 minutes, or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into squares; sprinkle with powdered sugar or frost.

    Step1

    Preheat oven to 350 degrees F.

    Step2

    Grease an 8-by-8-by-2-inch baking pan. Set aside.

    Step3

    Melt butter and chocolate together in a medium-sized saucepan over low heat. Or place them in a microwave-safe container and heat - 2 minutes at a time at 50 percent power - until melted (check after every 2 minutes). Remove from heat.

    Step4

    Stir in eggs, sugar and vanilla with a wooden spoon. Beat lightly until just combined.

    Stir in flour and nuts.

    Spread batter in baking pan. Bake 30 minutes.

    Tips and warnings:

    # Don't overbake the brownies. You don't want them to be dry and crumbly when they cool.

    Chocolate Caramel Brownies

    Ingredients:

    1 pkg. (18.25 oz.) chocolate cake mix

    1 cup chopped nuts

    1 cup NESTLÉ® CARNATION® Evaporated Milk, divided

    1/2 cup (1 stick) butter or margarine, melted

    35 (10-oz. pkg.) caramels, unwrapped

    2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels

    Directions:

    Preheat oven to 350° F.

    Combine cake mix and nuts in large bowl. Stir in 2/3 cup evaporated milk and butter (batter will be thick). Spread half of batter into ungreased 13 x 9-inch baking pan.

    Bake for 15 minutes.

    Heat caramels and remaining evaporated milk in small saucepan over low heat, stirring constantly, until caramels are melted. Sprinkle morsels over brownie; drizzle with caramel mixture.

    Drop remaining batter by heaping teaspoon over caramel mixture.

    Bake for 25 to 30 minutes or until center is set. Cool in pan on wire rack. Cut into 24 squares.

    Cheesecake Brownies  



    Ingredients

    1  cup quick-cooking rolled oats

    1/2  cup all-purpose flour

    1/2  cup packed brown sugar

    1/4  teaspoon baking soda

    1/4  teaspoon salt

    6  tablespoons butter, melted

    1  3-ounce package cream cheese, softened

    1  egg yolk

    1  cup granulated sugar

    10  miniature chocolate-coated caramel-topped nougat bars with peanuts, chopped

    1/4  cup butter, melted

    1  ounce unsweetened chocolate, melted and cooled

    1/2  teaspoon vanilla

    1  egg

    2/3  cup all-purpose flour

    1/4  teaspoon baking powder

    1/4  teaspoon salt

    1/4  cup milk

    1  cup purchased chocolate fudge frosting OR your favorite homemade chocolate fudge frosting

    Directions

    Preheat oven to 325 degrees F. Grease the bottom of a 2-quart rectangular baking dish; set aside. In a medium bowl, combine oats, the 1/2 cup flour, the brown sugar, baking soda, and 1/4 teaspoon salt. Stir in the 6 tablespoons melted butter. Pat into prepared baking dish. Bake for 10 minutes.

    Meanwhile, for cheesecake layer: In a small bowl, stir together cream cheese, egg yolk, and 1/4 cup of the granulated sugar; spoon in small dollops over the partially baked layer. Sprinkle with chopped nougat bars.

    In a large bowl, combine the remaining 3/4 cup granulated sugar, the 1/4 cup melted butter, melted chocolate, and vanilla. Beat in egg. In a small bowl, stir together the 2/3 cup flour, the baking powder, and 1/4 teaspoon salt. Alternately add flour mixture and milk to chocolate mixture, beating with a wooden spoon after each addition just until combined. Carefully spoon over cheesecake layer. Bake for 30 to 35 minutes or until top springs back when lightly touched.

    Cool in pan on a wire rack. Spread with chocolate fudge frosting. Cut into bars.

    Makes: 32 bars

    TO BAKE AHEAD: Bake as directed; do not cut into bars. Cover pan; chill for up to 2 days.

    TIP: For a satiny finish, spread the fudge frosting on with a warm metal spatula.

Mine are a little out of the ordinary.  One box of low fat brownie mix, One can pumpkin.  Stir together and pour into an 8 by 8 sprayed pan.  Melt 1/4 cup peanut butter and pour on top, drop small amounts of sugar free jam on top of that and swirl through with a knife.  Bake for time amount on box.

                           Chocolate Brownies

                 INGREDIENTS

                     serves 2

        200 gms sugar

        2 eggs

         150 gms butter , melted

         20 gms cocoa powder

      300 gms cashew nuts , roughly chopped

        50 ml milk , warm

       130 gms flour

       2 gms salt

          

      Now ,       Method

           In a mixing bowl , whisk sugar

        and eggs till creamy .

      Using a flat spatula , fold in butter and cocoa

    powder. Stir in cashew nuts .

    Gradually add milk and flour ,

    ensuring mixture is smooth .

    Add salt and mix well .

    Pour above mixture in a

    greased tray and bake in

    a pre-heated oven at 165 degrees Celsius

    for 45 minutes . Cool , & have fun !!!

  9. These brownies are heavenly and to die for! I am sorry to say I didn't come up with this recipe. It is a lot of work but very good. If you want plain brownies then leave out the coconut, pecans, marshmallows, and fudge topping.

    Mississippi Mud Brownies:

    1 1/2 sticks butter

    1 3/4 cup sugar

    3/4 cup cocoa powder

    4 large eggs

    2 tsp. vanilla extract

    1/2 tsp. salt

    1 1/2 cups all purpose flour

    1/2 cup pecans, chopped

    1/2 cup flaked sweetened coconut

    3 cups mini marshmallows

    Fudge Topping:

    5 tbsp. butter

    1 square unsweetened chocolate

    1/3 cup cocoa powder

    1/8 tsp. salt

    1/4 cup evaporated milk or heavy cream

    1 tsp. vanilla extract

    1 cup powdered sugar

    1/2 cup pecans, chopped

    1/4 cup flaked sweetened coconut

    Preheat oven to 350 degrees and grease and flour a 13 x 9 inch baking pan. For brownies: In saucepan, melt butter over low heat and whisk in sugar and cocoa. Remove from heat and beat in eggs one at a time. Beat in vanilla and salt. With a wooden spoon stir in flour just until blended and then stir in pecans and coconut. Batter will be thick and spread in pan and bake for 25 minutes. Remove from oven and spread marshmallows over brownies and return to oven to bake about 10 minutes until they are puffed and golden. Cool completely on wire rack. For topping: In saucepan, melt butter and chocolate over low heat. Stir in cocoa, salt, evaporated milk, vanilla, and sugar until smooth. You can pour this over the brownies or stir in the pecans and coconut as well or put those on top of the brownies and fudge topping.
