  1. *Boil the chicken and debone it.

    * Cut the chicken into bite size pieces.

*Add carrots, peas  and other veggies that you like.  Onions aren't really that good in the soup.

If you want the broth thick take some of the boiled chicken water let it cool

*(add an ice cube for faster cooling and then

add 1 tablespoon of flour and beat it until it is smooth with a fork)

*Add that back into the pot of chicken and broth.

    * Add salt and pepper and a little garlic or any other seasoning you like.

    DIRECTIONS

       1. Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).

       2. Take everything out of the pot. Strain the broth. Pick the meat off of the bones and chop the carrots, celery and onion. Season the broth with salt, pepper and chicken bouillon to taste, if desired. Return the chicken, carrots, celery and onion to the pot, stir together, and serve.

  4. Fill large pot with water.  Add 4-6 bullion cubes.  Add cut up chicken, chopped carrots, chopped celery and one whole peeled onion.  Add pepper and parsley to taste.  Simmer for 2-3 hours or until veggies are tender and chicken is fully cooked.  You can remove the onion if desired.  Prepare egg noodles to add to individual bowls as served.

  5. Boil chicken..keep the broth for later. Cut up chicken in pieces. Add bag of frozen preferred veggies (if veggies not frozen add after noodles are cooked) and uncooked egg noodles and chicken pieces into broth from boiled chicken. You may need to add chicken broth from can or chicken bullion cubes if you need more soup. Season to taste and add corn starch (1tsp at a time) until it is at the thickness you like it. Viola! you have chicken noodle soup.

  6. I usually boil a chicken carcus and then take the bones out and add carrot, leek, and celery and simmer.  when the veggies are cooked but not too soft I add noodles and boil until done and add salt and pepper to taste.  If I am not using a carcus then I just boil whatever cut of chicken I'm using and then take it out and let it cool a little and cut it up while the vegies cook.

  7. Soup:- Chicken Noodle

1 stewing chicken (about 4 pounds), cut up

    3 quarts water

2 cans (14-1/2 ounces each) chicken broth

5 celery ribs, coarsely chopped, divided

4 medium carrots, coarsely chopped, divided

    2 medium onions, quartered, divided

2/3 cup coarsely chopped green pepper, divided

    1-1/4 teaspoons pepper, divided

    1 bay leaf

    2 teaspoons salt

8 ounces uncooked medium egg noodles

    Directions:

In a large kettle, combine the chicken, water, broth, half of the celery, carrots, onions and green pepper, 1/2 teaspoon pepper and the bay leaf. Bring to a boil. Reduce heat; cover and simmer for 2-1/2 hours or until chicken is tender. Chop the remaining onion; set aside.

Remove chicken from broth. When cool enough to handle, remove meat from bones and cut into bite-size pieces. Discard bones and skin; set aside.

Strain broth and skim fat; return broth to kettle. Add salt, chopped onion and remaining celery, carrots, green pepper and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until vegetables are crisp-tender. Add noodles and chicken. Cover and simmer for 12-15 minutes or until noodles are tender. Yield: 16 servings.
