  2. You can manage to duplicate some of the taste if you follow a good recipe and observe some essential points: using cold overnight rice, a really hot wok/pan and fast cooking to evenly distribute heat & seasonings.

    But frankly most home kitchens will be unable to capture the intense fragrant flavour of just-cooked fried rice in a Chinese restaurant because many Western kitchens are not equipped with a gas stove capable of producing really big flames with the right heat. Without that, you cannot capture what the Chinese call 'wok hei' into the individual rice grains, somewhat akin to infusing the fried rice with a sizzling iron hotplate flavour.

  3. INGREDIENTS:

    4 cups cold cooked rice

    8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped

    2 eggs (more if desired)

    1/2 cup green peas

    1 medium onion, diced

    1 green onion, diced

    Seasonings (add according to taste):

    Light Soy Sauce

    Oyster sauce

    Salt

    Pepper

    Oil for stir-frying, as needed

    PREPARATION:

    Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).

    Chop the chicken meat and dice the onion and green onion.  

    Heat wok and add oil.

    When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once.  Cook the other half the same way.  Cut the egg into thin strips, and save for later.

    Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas.

    Add oil, turn down the heat to medium and stir-fry the rice.  Add the soy sauce, salt, pepper and oyster sauce.  Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. (Alternately, you can mix the green onion and egg in with the other ingredients).

  4. 1) the secret is speed ( make sure everything you need is around you)

    2) the control of your heat...

    but it takes years of practise to make it taste like the resturant ....

    but you can can to make something similar to them...get a non-stick wok or pan would help ...

    recipe:

    ->rice ( better if you have over nite cold rice, if not just cook your rice with a little less water)

    -> egg (beaten)

    -> soy sauce

    -> white pepper and salt

    -> frozen mix peas

    -> prawn/ or any meat (slice thinly) / hotdogs diced

    -> chicken /pork favour powder seasoning

    -> garlic (finely chopped)

    -> onions ( slice )

    -> add little oil

    Heat ( medium -high heat)

    fried garlic and onions ( with little oil , for 10 sec) ad add the meat ( till cooked)and add mix veg,  add rice stir well...flatten the rice and pour all the egg on-top of the rice.. and stir and mix well .

    add pork/chicken seasoning , pepper and a bit of salt... stir fried until well mix.. taste (if not salty , add soy sauce or more pepper)

    do not add water unless your rice is a bit too dry ( just put a dash of water on the rice during cooking if you want your rice a bit moist and stir fried it quickly ..)...
