  1. CRUMPETS

    1 c. all-purpose flour

    1 pkg. active dry yeast

    2/3 c. milk

    1 tbsp. butter

    1/4 tsp. salt

    1 egg

    1/4 c. butter

    In a small bowl combine 1/2 cup flour and yeast. In saucepan heat milk, 1 tablespoon butter and salt, until warm, stirring constantly. Add to dry ingredients in mixing bowl; add egg. Beat at low speed of electric mixer for 1 minute, scraping side of bowl constantly. Stir in remaining flour. Beat until smooth. Cover and let stand until doubled (about 1 hour).

    In large skillet melt half or the remaining butter. Lightly brush crumpet rings with butter; place in skillet. Pour 2 tablespoons of batter into each ring. Cook over medium heat until the crumpets are browned on one side (4-5 minutes). Remove the ring, turn crumpet, cook 4-5 minutes. After 4 crumpets, clean ring with paper towel. Repeat process.

    pkg. active dry yeast

    1 tsp. sugar

    1/4 c. warm water

    1/3 c. milk, room temperature

    1 egg

    4 tbsp. butter, melted

    1 c. all purpose flour

    1/2 tsp. salt

    In large bowl combine first 3 ingredients. Let stand until bubbly (about 15 minutes). Blend in egg, milk and 1 tbsp. butter. Add flour and salt and beat until smooth. Cover and let stand in warm place until doubled about 45 minutes.

    Brush griddle and the inside of 3 inch ring with butter. Heat ring on griddle over low heat (325 degrees). Pour about 3 tbsp. batter into each ring.

    Bake about 7 minutes or until holes appear and tops are dry. Remove rings and flip to brown other side lightly. Serve warm with butter, syrup, preserves or favorite topping.

    CRUMPETS

    1 1/2 c. milk

    1 c. water

    2 tsp. honey

    1 pkg. active dry yeast

    3 c. flour

    1 tsp. salt

    1/2 tsp. baking soda

    2 tbsp. butter, melted

    In saucepan heat milk and 3/4 cup water to boiling. Pour mixture into a large bowl and cool to 115 degrees. Add honey and yeast. Let stand 5 minutes.

    Beat flour and salt into mixture until well combined. Cover bowl and let batter rise until double in size - 1 hour. Stir together remaining 1/4 cup water and baking soda. Beat into batter. Let batter rest, covered, 5 minutes.

    Brush griddle with melted butter and heat over medium heat. Pour 1/4 cup batter onto griddle and cook 4 minutes (or until lightly browned) then turn over and lightly brown other side. Serve warm with jam or homemade Devonshire Cream.

    DEVONSHIRE CREAM:

    Beat 1 (8 ounce) package of cream cheese, softened, until fluffy.

    Beat in 1/2 cup sour cream and 2 tablespoons confectioners sugar, until well mixed.

  3. Quick Crumpets.

    Yeast takes time to ferment. Try this recipe - you will enjoy it.

    60g (125ml) flour

    12.5 ml baking powder

    1ml salt

    20g sugar ( add a little more to taste)

    1 beaten egg

    125ml milk.

    Sift dry ingreadients together.

    Beat egg and milk, and beat into dry ingredients to make batter that will just drop off a spoon.

    Beat thouroughly and leave for 10 minutes.

    Heat griddle, grease slightly and pour spoonful of mixture on to the griddle.

    When bubbles form on top of crumpet, turn with spatula. They must be golden brown when done.

    Serve with butter and jam (Jelly?) or syrup..

    ALTERNATIVE WITH SELF RAISING FLOUR.

    2 eggs

    40g sugar (50ml)

    250ml milk

    280g (500ml) self-raising flour

    2ml salt.

    Cook as above.
