I need to know how to make a simple but delicious and creamy custard.

  1. Ingredients

        * ¾ pint (420 ml) of milk

        * 4 egg yolks

        * 3-4 tbsp of caster sugar

        * 1 vanilla pod

    Method

       1. Pour the milk into a fairly large saucepan.

       2. Split the vanilla pod down the middle with a sharp knife and whilst holding the pod over the pan of milk, scrape out the black seeds and add them to the milk. Add the pod itself to the milk also.

       3. Heat the milk over a medium heat until small bubbles begin to appear. At this point, remove the pan from the heat, cover with a lid and set aside for about 15 minutes.

       4. After this time, remove the actual pod from the milk and discard.

       5. In a medium sized mixing bowl, beat together the egg yolks and the sugar until a light and creamy mixture appears.

       6. Prepare a saucepan of hot water and leave on the stove.

       7. Remove the lid from pan containing the milk and vanilla and gradually pour the milk into the egg yolk and sugar mixture in the mixing bowl. Stir continuously whilst adding the milk.

       8. Once all of the milk has been added, place the mixing bowl over the pan of hot water and set to a low heat, ensuring that the water does not boil.

       9. Cook the custard for about 10-15 minutes, stirring constantly until the custard thickens to the desired consistency.

      10. Remove the bowl from the heat and strain the custard through a sieve into a bowl and serve.  


  2. Okay.  Here is a recipe.  Since you can probably Goole things faster than I can, I must think that you are asking for the SECRET to a lovely creamy custard.

    The secret is to not beat TOO much and to NOT BOIL it.

    Creme Brulee which is egg custard with a seared sugar topping is my favorite dessert.

    BAKED EGG CUSTARD

    4 eggs

    2 1/2 c. milk

    1-2 c. sugar

    Vanilla

    Nutmeg

    Place all ingredients in a saucepan. Beat together. (The secret of this custard is to beat gently until everything is just thoroughly mixed). Heat the mixture until hot, but not boiling. Place in baking dish, sprinkle more nutmeg over the top if desired and bake in a 325 degree oven for 40 minutes.

    1 fresh vanilla pod

    10 oz. double cream/heavy whipping cream

    4 large egg yolks

    1 teaspoon corn flour

    1/3 cup light brown sugar or honey

    Step 1:

    Prepare the cream. Split the vanilla bean pod and separate from the seeds and mix with cream in a small saucepan. Heat on a low heat setting to bring mixture to a simmer.

    Step 2:

    2Prepare custard. Whisk the egg yolks, sugar, and corn flour in a medium bowl until thoroughly combined.

    Step 3:

    3Combine the mixtures. Remove the vanilla pod from the cream mixture, and slowly pour it over the egg yolks. Keep whisking the egg mixture as you pour.

    Heat again. Pour the mixture back into the saucepan and gently whisk until custard becomes thick. It will become more smooth as it simmers.

    Step 5:

    Continue whisking until custard becomes thick, smooth, and is the consistency of a pudding.

    Step 6:

    Pour the mixture into a bowl and cover with cling film. Refrigerate immediately.
