  1. you need to use day old rice (never use freshly cooked rice as it is too soft). heat up oil in a wok or frying pan and stir-fry the rice. add small amount of water to soften the rice. the egg can be scrambled first and added to the heating rice... or a raw egg can be cracked over the rice and mixed in. use scallions, bits of ham, and a little soy to flavor if desired.


  2. 1. Boil rice with little salt in plenty of water till rice is tender. Drain rice. Store in refrigerator overnight. The rice must be cold to be fried.

    2. Heat a pan with peanut oil or any cooking oil. Put cold rice. Fry moving rice.

    3. Collect rice in a mountain. Pour beaten eggs. Continue frying the eggs and rice. Till done.

    Serves 4.

    3 large eggs, lightly beaten w/ 2 tsp. waer

    2 Tbsp vegetable oil, divided

    ½ tsp. toasted sesame oil

    Coarse salt to taste

    4 green onions, thinly sliced diagonally (both white and green parts)

    4 garlic cloves, minced

    5 oz. ham, thinly sliced and chopped (can use cooked chicken, pork, or shrimp as well)

    4 cups cold cooked rice

    3 Tbsp. rice vinegar

    1 cup frozen peas, thawed

    In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat.  Beat eggs, with 2 tsp. water and ½ tsp. coarse salt.  Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes.  Transfer to plate; when cool enough to handle, cut into strips.

    In same skillet, heat remaining Tbsp. vegetable oil and sesame oil.  Add garlic and scallions, heat and stir until fragrant, about 1 minute.  Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes.  Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

    DIRECTIONS

    In a saucepan bring water, salt and soy sauce to a boil. Add rice and stir. Remove from heat, cover and let stand 5 minutes.

    Heat oil in a medium skillet or wok over medium heat. Saute onions and green beans for 2 to 3 minutes. Pour in egg and fry for 2 minutes, scrambling egg while it cooks.

    Stir in the cooked rice, mix well and sprinkle with pepper.

  6. I just take day old rice and fry it up in  a little oil.  I add onions, green or reg is fine.  Salt it. Add soy sauce.   Add scrambled eggs to one side of pan, after you have moved all the rice to other side.  cook eggs and then mix with rice.  I like to add peas right before it's done.  It's really good served Thai style with fresh cucumbers and tomatoes.

    in pan saute  red and green pepper for two minutes

  9. Fried Rice

    Make rice, put it on a baking sheet and put in it the freezer, uncovered. weird, but it works

    Sautee carrots, peas, red pepper flakes & garlic in olive oil in a large pan. (doesnt matter if fresh or frozen vegs) Add chicken, beef or shrimp to cook, then add green onions and bean sprouts. Then add rice (gets a little cold and sticky in the freezer, which you want, otherwise it gets mushy), soy sauce , mix around. Create a hole in the middle of the pan and drop the egg, it will cook up in no time.

    4 cups water

    2/3 cup chopped baby carrots

    1/2 cup frozen green peas

    2 tablespoons vegetable oil

    2 eggs

    soy sauce to taste

    sesame oil, to taste (optional)

    DIRECTIONS

    In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.

    In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.

    Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.


  11. Cook your rice according to the package instructions. In a large pan, saute a chopped onion in some olive oil and a little butter. When the onions are translucant, add an egg that has been slightly beaten and stir it around with the onions until it's cooked. Add the cooked rice and some soy sauce. You then have fried rice! I make it all the time.
