  2. Okay, right, so you need to try and find elderflower, here's info about it from wikipedia...

    Okay you'll probably need about 20 heads of elderflower, if you can find it.

    Ingredients:

    20 heads of elderflower (just the stem & flower part, not any leaves)

    1.5kg granulated/caster sugar (approximate, you can completely vary the amount to your taste, depending on how much of a sweet-tooth you have! =])

    1.2 litres water

    2 unwaxed lemon

    Method:

    *Shake the elderflower to get any bugs & what-not out of it, then put into a large pan/pot

    *Chop some lemons & put them into the pan/pot, along with the elderflower.

    *Heat the 1.2 litres of water with the sugar until it reaches a steady rolling boil, let it boil for a little while.

    *Then pour the boiling liquid over the elderflower & lemon, then stir. Press the elderflower down a bit so it's all covered.

    ****Leave overnight****

    *The next morning, give the cordial a stir, & strain it through a sieve lined with muslin or something of that sort.

    *Then once sieved, pour into clean bottles. =]

    Best served chilled, weakened with water to your liking. =]

    P.S.

    If you can find some, pink/red elderflower is much more delicate tasting, but white is nice all the same.

    1 sliced lemon

    2 tsp of citric acid

    1.5 kg of sugar

    1.2 ltr boiling water

    boil a kettle for the water.

    fill a bowl or small bucket with all the other ingredients.

    pour the water over the other ingredients and stir until the sugar has dissolved. skin the surface of the water to get rid of the scum that can arise. cover with a cloth.

    stir twice a day for five days.

    strain though a fine sieve though a fine sieve or through muslin cloth and decant into sterile s***w topped bottles. refrigerate.

    as with other cordials dilute with 5 parts water to serve . experiment with it and add it to some of your favourite spirits.

    1.2 ltr (2.5 pints) boiling water

    Method

    Stir twice a day for five days.

    Strain though a fine sieve though a fine sieve or through muslin cloth and decant into sterile s***w topped bottles. Refrigerate.

    As with other cordials dilute with 5 parts water to serve .  Experiment with it and add it to some of your favourite spirits. It is really nice as a gin mixer.
