  1. 2 lbs collard greens, tough stems discarded, leaves chopped--fresh

    2 Tbsp medium onion, chopped

    1 large garlic clove, minced

    1 tbsp bacon fat

    2 Tbsp olive oil

2 Tbsp dark sesame oil (Dynasty or comparable)

    Chili pepper flakes, a pinch

    Salt, a couple pinches

    Sugar, a couple pinches

1 Use a large skillet with a tight fitting cover. Melt bacon fat and heat olive oil on medium heat. Sauté onion until transparent, a couple of mintues. Add garlic and and sauté until fragrant, about 20 seconds.

2 Mix in the greens, sesame oil, chili pepper flakes, salt, and sugar. Cover and cook until tender, 8-10 minutes.

    Serve with barbecue sauce

  2. Fresh is always better! but since you a starter and you properly don't know how to strip it to avoid it being bitter get da frozen kind.

when cooking it just add some oil to da pot

add some chopped onions, tomatoes, sweet peppers, 1 clove of garlic,

saute in pot then add your collard green in mix in with ingredients that was previously added. To make it more tasty add some black pepper, salt/seasoning salt. OHHH!OH!OH you got your self some collard greens.

With that you can have yourself some fried dumplings with plantains and anice glass of orange juice cause the vitamin C help in the absorption of the mineral iron in the collard greens.
