I always get the best results by cooking on high heat for several minutes.  Don't overcook it because it will get tough.  Pre-heat your skillet or grill on high for several minutes.  You can marinate (garlic, olive oil and a touch of wine vinegar is good), or just rub olive oil on both sides, season with salt and pepper and cook it fast. Only about 2-3 minutes (for medium) on both sides.  It should sizzle really good when you put it on the heat.  Then let it rest for at least 10 minutes under foil before serving.  Only turn it once.

    Another tip that makes for excellent skirt steak is to cut it into thin strips across the bias of the grain. This helps to make it more tender for eating.
