How do you make them and how do you get them to stay nice and moist and not turn hard after they have cooled down.

  1. I tried countless sugar cookie recipes until I finally found this one.  It makes terrific cookies!

    Chewy Sugar Cookies

    1 ¼ c. butter    

    2 c. sugar

    2 eggs    

    2 t. vanilla

    ½ t. salt

    1 t. baking soda

    2 ¾ c. flour

    ¼ c. sugar for decoration

    Preheat oven to 350°.  In a large bowl, cream together butter and 2 cups sugar until light and fluffy.  Beat in the eggs one at a time, then the vanilla.  Gradually stir in the dry ingredients until just blended.  Roll the dough into walnut sized balls and roll the balls in the remaining ¼ cup of sugar.  Place cookies 2" apart onto ungreased cookie sheets and flatten slightly.

    Bake for 8-10 minutes, until lightly browned at the edges.  Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    Make sure you store them in an airtight container after they're cool.

    Ingredients

    1 1/2 cups sugar

    1 1/2 cups butter, softened (no substitutes)

    2 large eggs

    2 tablespoons vanilla extract

    4 cups all-purpose flour

    1 teaspoon salt

    1 teaspoon baking soda

    1 teaspoon cream of tartar

    Frosting

    1 1/2 cups powdered sugar

    3 tablespoons butter, softened

    1 tablespoon vanilla extract

    various food coloring

    colored sprinkles

    Directions

    1 In a mixing bowl, cream together sugar and butter until fluffy.

    2 Add eggs and vanilla; beat well.

    3 Stir together dry ingredients; gradually add to creamed mixture until completely blended.

    4 Cover and chill for at least 30 minutes.

    5 On a lightly floured surface, roll dough to 1/4-inch thickness.

    6 Cut with various shaped cookie cutters dipped in flour.

    7 Transfer cookies to ungreased cookie sheet.

    8 Bake at 350° for 10-12 minutes.

    9 Cool on wire racks.

    10 Frosting: Mix together sugar, butter, vanilla and milk until desired degree of spreading consistency; add milk if you want thinner frosting.

    11 Add food coloring to obtain desired color.

    12 Spread frosting over cookies and decorate with sprinkles.

    2/3 cup shortening

    2/3 cup butter

    1 1/2 cups white sugar

    2 eggs

    2 teaspoons vanilla extract

    3 1/2 cups all-purpose flour

    2 teaspoons baking powder

    1 teaspoon salt

    1/3 cup granulated sugar for decoration

    Preheat oven to 350 degrees F (175 degrees C).

    In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.

    Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

    Makes 24.
