How do you make homemade tuna fish (like from a can) out of freshly caught bluefin tuna filets?

you all need to try home cooked "canned" style  tuna fish-- obviously -  haha! the best I have ever had was yellowfin tuna sandwich -and this is a way to stretch the tuna for more servings---
