  1. Can only find this recipe for raspberry mousse cake. I suppose you could just use mandarins (or any other fruit) in place of the raspberries and it will be just as nice.



    Ingredients

    3 large ready-made Madeira cakes

    150ml/5fl oz brandy

    250ml/9fl oz fresh orange juice

    180g/6oz butter, softened

    180g/6oz sugar

    180g/6oz ground almonds

    180ml/6oz double cream, whipped until stiff peaks form when the whisk is removed

    400g/14oz frozen raspberries, thawed

    To serve

    75g/2¾oz icing sugar

    100ml/3½fl oz peach schnapps

    225g/8oz fresh raspberries

    double cream, whipped until soft peaks form when the whisk is removed

    Method

    1. Line a 1.5 litre/2 pints 13fl oz round-bottomed bowl/basin with cling film.

    2. Trim the crusts from the Madeira cake and cut into thin slices.

    3. Place the brandy and orange juice into a bowl and mix well.

    4. Dip the cake slices into the fruit juice and brandy mixture, then use to line the inside of the basin until all the inside is covered. You should have some cake left over to finish the pudding later.

    5. Place the butter and sugar into a clean bowl and beat together until completely combined.

    6. Add the almonds, a little at a time (be careful so the mix doesn't split), mixing continuously.

    7. Fold in the whipped cream, then add the thawed raspberries.

    8. Add the mixture to the inside of the cake-lined bowl.

    9. Cover with the remaining cake slices and place into the fridge to chill overnight.

    10. Sieve the icing sugar into a bowl and add the schnapps. Add the fresh raspberries and leave to macerate for at least one hour.

    11. To serve, carefully turn the cake out onto a large plate and gently remove the cling film.

    12. Cut out generous wedges of the cake and place onto plates. Spoon the macerated fruit alongside and add a dollop of cream.

        * 1 package yellow cake mix

        * 1 (11-oz) can mandarin oranges, not drained (will use the juice)

        * 1/2 cup applesauce

        * 4 egg whites

        * 1 (8-oz) carton fat-free cool whip

        * 1 (20-oz) can crushed pineapple

        * 1 (1-oz) package fat-free instant vanilla pudding mix

    Dir:

       1. Preheat oven to 350-deg F.

       2. Mix together yellow cake mix, mandarin oranges (with juice), applesauce and 4 egg whites.

       3. Pour mix in 9X13 pan sprayed with PAM or nonstick spray and bake for 30 minutes.

       4. Meanwhile mix together cool whip, crushed pineapple and vanilla pudding.

       5. Once cake has finished and cooled, use cool whip/pineapple mixture to coat the top of the cake.

       6. Refrigerate until ready to serve.
