Question:

How do you make mexican corn on the cobb what do they put on the corn is it the mexican cream ??

I had this by vendors really good but not sure what ingredients are on this does anyone know this is really good if you like corn.

  1. OMG, i LOVE Corn...i'm Mexican and i KNOW what corn you're talking about.

    they put the corn to steam in water .

    you take the husks off the corn and the yellow hairs too, and you put the corn in water on the stove.

    throw in some husks  in the pot, to give the corn some flavor.

    you spread mayonaise and parmesan cheese over it, with some Tapatio hot sauce or Valentina hot sauce.

    the cheese is usually parmesan, but you could also use "cotija" cheese.

    you can find cotija at any mexican meat store or mexican grocery store. or in a cheese aisle at any grocery store.

    the cotija cheese comes in a "round shape" like a CD and it's thick, and white. you crumble it and you can cover your corn with it.

    i've had this corn here in teh USA and also when i visit Mexico City where my mom's family is from.

    i've bought this corn from the vendors selling it on the streets..it's really good.

    they bring out the corn from their "cart" and the corn is steaming hot and they put all kinds of goodies on it.

  2. The vendors roast them in the husks... ANYTHING tastes good that way!  Then they dip it in butter.  The vendors I"ve seen let you add your own seasonings: seasoned salt, S&P, parmesan cheese, lemon-pepper, garlic salt, that sort of thing.  I love parm cheese and pepper!

    also try:

    Roasted Corn on the Cob with Cilantro Lime Butter

    6 ears corn, shucked

    Cilantro Lime Butter, recipe follows

    Preheat oven to 400ºF.

    Coat each ear of corn in 2 tablespoons of the cilantro lime butter and wrap individually in foil. Roast until hot and steaming, about 25 minutes. Serve with extra butter on the side.

    Cilantro Lime Butter:

    2 sticks unsalted butter, at room temperature

    1/4 cup chopped cilantro leaves

    1 lime, zested and juiced

    2 teaspoons salt

    3/4 teaspoon cayenne pepper

    Put the butter in a mixing bowl and, using a rubber spatula, mix in the cilantro, lime zest, lime juice, salt and cayenne. Use immediately or refrigerate.

    Yield: 3/4 cup

  3.   As a kid we always had it with Mayonnaise, butter, Parmesan cheese, and hot sauce.  Wow your making me hungry.

    "My Mexican friend gave me this recipe for corn on the cob. Street vendors there sell their corn made this way. Cotija cheese can be found in most grocery stores."



    INGREDIENTS (Nutrition)

    4 ears corn, shucked

    1/4 cup melted butter

    1/4 cup mayonnaise

    1/2 cup grated cotija cheese

    4 wedges lime (optional)



    DIRECTIONS

    Preheat an outdoor grill for medium-high heat.

    Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.
