How do you make mexican rice or puerto rican rice?

Well Im hungry and want to try something new for my mom.... Can I get some rtips?

  1. Heat a tablespoon of corn or canola oil in high heated frying pan. Stir 1 cup raw rice (par-boiled rice works best, if you have it in your grocery store). Stir rice in oil until toasted brown. Add enough water or chicken broth to cover rice by 1/2 an inch. Turn heat down to med-high and stir in 2 Knorr cubes of tomato spice ... Or 2 Goya jamon spice packets, and a dash of cumin. Simmer uncovered on med-high heat until liquid evaporates, adding just a bit more at a time until rice is tender but firm. Do not stir often to avoid mushy rice.

    MEXICAN RICE RECIPE

    Preparation Time

    10 minutes

    Cooking Time

    25 minutes

    Ingredients (serves 6)

        * 300g (1 1/2 cups) Wild Blend rice (Sun Rice brand)

        * 2 tsp olive oil

        * 1 small brown onion, finely chopped

        * 1 carrot, thinly sliced

        * 1 garlic clove, crushed

        * 625ml (2 1/2 cups) chicken stock

        * 130g (1/2 cup) canned diced tomatoes

        * Freshly ground black pepper

        * 80g (1/2 cup) frozen green peas, thawed

        * 4 green shallots, trimmed, sliced

    Method

       1. Place rice in a sieve and rinse under cold running water until water runs clear. Drain.

       2. Heat oil in saucepan over medium heat. Add onion, carrot and garlic. Cook, stirring, for 5 minutes or until the onion is soft.

       3. Add rice and stir well. Stir in stock, tomatoes and pepper. Bring to boil over high heat. Reduce heat to low, cover tightly and cook, without lifting the lid, for 15 minutes.

       4. Add peas to pan, cover and cook for a further 5 minutes. Set aside for 10 minutes before lifting the lid.

       5. Add the green shallots and use a fork to gently fluff and combine the rice mixture. Spoon into a serving bowl and serve hot.

    Notes & tips

        * Prep: 10 mins (+ 10 mins standing time)

        * This recipe can be made up to the end of step 2 up to 6 hours ahead. Continue from step 3, 30 minutes before serving.

    PUERTO RICAN RICE & BEANS

    1 chopped onion

    1 can tomato sauce

    1 can beans

    1 jar (4.5 oz.) chopped garlic

    1 c. water

    12 oz. pkg. rice

    Oil

    Salt & pepper

    Oil

    Oregano

    Saute in hot oil garlic, onion and add tomato sauce, salt and pepper, water, uncooked rice, a bit more oil, beans. Simmer and reduce. Sprinkle with oregano.

    Sounds like puerto rican rice is easier xD

  3. I make Mexican rice a lot:

    About 1 cup white rice.

    Slice or two of onion.

    Fresh garlic cube.

    Vegetable oil (enough to cover bottom of pot)

    Knorr chicken, and tomato cubes (one each)

    And one Romano tomato (not sure if i spelled correctly).

    In pot fry rice in oil until brown.

    In blender blend tomato with onion, garlic and cubes and salt to taste. Also adding water until 2 to 3 cups line.

    When rice is brown add mixer from blender.

    Cover and let simmer on medium low, adding more water from blender as needed.

    For best results do not stir!

    PS this is the red rice recipe, you can also make the white rice recipe by leaving out the tomato and tomato flavored Knorr cubes and adding one more chicken flavor cubes to make two cubes all together.

    Sometimes i like to add a veg like corn or green peas to the rice (very good)!

  4. arroz con gandules is puerto rican rice with pigeon peas.  

    get a big pot and put some oil in the bottom and warm it up and stir in the rice.  then add either some salsa or some tomato sauce (not much-maybe 1/3 cup) some goya sazon (the orange kind) and a half jar of goya sorfrito (also orange) or you can buy it frozen, many people like that better.  wash of the beans and add into the rice about half the can.  pour over some water (2 cups for each 1 cup of rice)  then just cook as regular, bring to a boil and reduce. don't stir it or it will get sticky.  wash the rice before you cook it.

    some people like to put some bacon grease instead of oil to start.  also, you can add sliced green olives or some vienna sauasage.

    anyway, its really good!
