  1. The easiest way is to grill, roast, whatever the bird and brush on soem melted orange marmelade for the last couple of minutes of cooking.

    INGREDIENTS (Nutrition)

        * 1/2 cup orange marmalade

        * 1/4 cup balsamic vinegar

        * 2 tablespoons olive oil

        * 1 teaspoon rubbed sage

        * 2 tablespoons chopped fresh chives

        * 1 (3 pound) chicken, cut into pieces

        * 1/2 teaspoon garlic salt

        * 1/4 teaspoon coarsely ground black pepper

    DIRECTIONS

       1. Preheat a grill for medium heat.

       2. Combine the marmalade, vinegar, olive oil, and sage in a small saucepan. Cook over low heat for 2 minutes until smooth. Stir in the chives, then remove 1/3 of the sauce to serve with the chicken later on.

       3. Season the chicken pieces with garlic salt and pepper. Grill for about 15 minutes on each side, then brush with glaze. Continue cooking until done, 20 to 30 minutes, turning occasionally, and brushing with additional glaze. Serve with reserved marmalade glaze.

    Asian Orange Chicken

    INGREDIENTS:

    Sauce:

    1 1/2 cups water

    2 tablespoons orange juice

    1/4 cup lemon juice

    1/3 cup rice vinegar

    2 1/2 tablespoons soy sauce

    1 tablespoon grated orange

    zest

    1 cup packed brown sugar

    1/2 teaspoon minced fresh

    ginger root

    1/2 teaspoon minced garlic

    2 tablespoons chopped green  onion

    1/4 teaspoon red pepper flakes



    3 tablespoons cornstarch

    2 tablespoons water



    Chicken:

    2 boneless, skinless chicken

    b*****s, cut into 1/2 inch pieces

    1 cup all-purpose flour

    1/4 teaspoon salt

    1/4 teaspoon pepper

    3 tablespoons olive oil

    DIRECTIONS:

    1. Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Remove from heat, and cool 10 to 15 minutes.

    2. Place the chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve the remaining sauce. Seal the bag, and refrigerate at least 2 hours.

    3. In another resealable plastic bag, mix the flour, salt, and pepper. Add the marinated chicken pieces, seal the bag, and shake to coat.

    4. Heat the olive oil in a large skillet over medium heat. Place chicken into the skillet, and brown on both sides. Drain on a plate lined with paper towels, and cover with aluminum foil.

    5. Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together the cornstarch and 2 tablespoons water; stir into the sauce. Reduce heat to medium low, add the chicken pieces, and simmer, about 5 minutes, stirring occasionally.

  6. BAKED ORANGE CHICKEN  

    1/4 c. frozen orange juice

    1 tsp. lemon juice

    2 tbsp. & 1 tbsp. honey

    1/2 tsp. grated orange peel

    1/2 tsp. ginger

    4 skinless chicken breast

    2 tbsp. orange marmalade

    Orange slice for garnish

    Preheat oven to 400 degrees. Mix orange juice, lemon juice, 2 tablespoons honey, orange peel and ginger. Let chicken marinate in this mixture for 10 minutes. Bake uncovered for 8 minutes. Baste in juices and bake another 8 minutes. Glaze again with juices and 1 tablespoon honey. Bake 8-10 minutes. Put on serving dish and garnish with orange slice.

    Orange Glazed Chicken

    (prep time 10 minutes, baking time 50 minutes)

    6 chicken skinless chicken thighs or b*****s (can be boneless or with bone)

    Salt and pepper to season chicken

    ¼ teaspoon paprika or enough to sprinkle on each chicken piece

    1 ½ cups apple juice

    2 Tablespoons cornstarch

    1/3 cup low sugar orange marmalade

    ½ teaspoon salt

    ¼ teaspoon freshly ground black pepper

    1 orange, cut into ½ slices

    Remove skin from chicken if necessary and place chicken in a 9”x13”x2” glass baking dish. Season the chicken with a small amount of salt, pepper and paprika. Pour apple juice into a cold sauce pan and stir in cornstarch. When mixed well, add rest of the ingredients. Place pan on the stove and cook over medium-low heat, while stirring constantly, until mixture thickens. Remove from heat and spoon glaze over each piece of chicken.Bake at 350° for approximately 45 minutes or until done (small boneless pieces may be done in less time)Place ½ slice of an orange on top of each piece of chicken and bake for an additional 5 minutesServe over rice.

    Prep ahead Tip: Make glaze and cool slightly before spooning over chicken. Assemble dish, cover and refrigerate until ready to bake.
