Question:

How do you make pancakes?

when i try to make pancakes they get all over the place and i end up dumping the rest of the batter down the sink drain. is there a certain technique to making pancakes, or am i just retarded?

    as far as technique... just pour the batter slow and in one spot. Sounds to me like your problem is the batter might be too runny and not enough flour.  But i love using www.epicurious.com to find most any recipe im looking for.

  5. Try this and take your time making it

    2 cups Buttermilk pancake mix-- like betty crocker

    1 1/4 cup milk or buttermilk or heavy cream

    1 cup cream cheese, whipped

    1/2 cup Sugar

    1 teaspoon Vanilla extract

    ***Strawberry-Lemon Syrup:***

    1 cup Syrup

    1 cup sliced strawberries

    1/2 teaspoon lemon rind



    Directions:

    Preheat griddle.

    Combine the pancake mix, milk, creamcheese, sugar, and vanilla extract in a medium bowl; stir well until blended.

    Pour batter by 1/4 cupfuls on hot, well-greased griddle.

    Flip pancakes when tops are covered with bubbles.

    For Strawberry-Lemon Syrup: Combine the syrup, strawberries, and lemon rind in a small saucepan; heat through, stirring occasionaly

    Make sure your batter is not too thick or too thin. You'll know what's the right consistency with experience.

    I always add some kind of oil or melted butter to my batter but I never grease the griddle. Experiment and see what works for you.

    Using a 1/4 or 1/3 measuring cup, scoop up some batter, scrape the cup on the rim of the bowl so it doesn't drip and pour the batter on a preheated griddle(I find an electric, nonstick griddle works the best--I set the temp to about 325 degrees) in a circle. Quickly using the rim of the measuring cup, 'smear' the batter into a perfect circle and thinning it out a little. Now, leave the pancake until you see little bubbles opening up along the surface and the edges look a little dry. Using a pancake turner, flip to the other side. The pancake won't take very long, remove when the color is golden brown. Don't overcrowd your griddle either! Practice and you'll be making and eating perfect pancakes!
