  1. You'll never get it as thin as commercially-prepared dough but you can definitely make your own -

I am a former chef and worked in Montreal, Quebec Canada, and I have seen how it is made, and as stated it quite a labour intensive procedure, like pulled strudel, the dough is flour, water, salt and oil and the dough must rest, but the trick is a floured table cloth and 4 hands, it is a tug of war and you have to stretch the dough from all 4 corners, and it is a long process, buy a good greek or Turkish one and make your desserts, the time spent making the pasty you could do any recipe 10X over.

  3. You don't - it is far too fiddly. Buy it ready made.
