I've been trying to figure out how chinese chefs get their roast pork to have such crispy skin. I've tried several times and have yet to figure it out.

  1. When the Chinese cook "Siu Yuk" Roasted Portk, they use a long thin knife to loosely separate the skin from the meat before roasting the pig, which causes the skin to virtually fry from the fat between the skin and the meat.

(by loosely, I mean do not totally remove the skin so that it completely falls off.)

  2. I've cooked pork on a rotisserie and got that crispy skin, l couldn't get it in an oven at all!

  3. Don't know

  4. lots of sauce then they broil it to a crisp

  5. Score the skin with a sharp knife (kina little criss cross cuts in it) rub in some peanut oil and Sprinkle with a good amount of salt and grill - Perfectand super crunchy!

  6. make a mixture of oil, garlic, honey and spices like curry, cheyenne pepper, salt

and put on the skin and roast

  7. While roasting, spray water over it time to time. The the temperature of the water and the heat react to each other, that brings crispiness.
