My boyfriend found a few Hog Plums and before we gathered more, I would like to know if anyone has a recipe that I can use to make Jelly out of them. I have searched on line and am not having any luck!

  1. Hog plum is a relative of the Mango, but ultimately a plum.  Some are sweeter then others yes, but any recipe will work.  A friend gave me plums a few weeks ago, no idea the variety but I followed a"Damson" Plum Jam, Jelly and Preserves recipe. It all turned out perfect.

Here's the recipe I used it's from the Ball Blue Book.

    Plum Jelly

    5 1/2 Cups Plum Juice

    7 1/2 Cups Sugar

    1 Package powdered pectin

First how to make juice from Hard Fruits:

Wash fruit, remove any stems and blossom ends; do not peel or core. Chop or quarter fruit; measure. Add 1 Cup water for each slightly heaped quart prepared fruit in a large sauce pot. Cover, simmer fruit until soft. Strain using a damp jelly bag or several layers of cheese cloth.

    Now for the cooking...

Combine juice and pectin in a large sauce pot. Bring to a boil over hight heat. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 min. stirring constantly. Remove from heat , skim foam if necessary. Ladle into hot, sterilized jars leaving 1/4 inch headspace. Process 5 min. in a boiling water canner. This recipe says it yields about 8 half pints..it was more like 10 1/2 when I did it.

Enjoy it! I'm sure it will be wonderful. It made so much that I've shared with everyone I know and some I don't! They've all said it taste wonderful, I hope yours turns out well!

If you decide to make preserves (which really has the sweet/tart taste) email me or pick up the Ball Blue Book - the best $8 I've spent. Found it at Wal-Mart you can also check the Ball online site.
