  1. Rock Candy for Kids --

    Ingredients

    2 cups granulated sugar

    Heavy cord

    1 cup water

    Directions

    1) Put one cup of water into a small saucepan, pour 2 cups of granulated sugar into the water, heat the water and sugar on the stove over a medium heat, continue stirring until the sugar melts, keep adding sugar and stirring until it melts, stop adding sugar when you see that it will no longer dissolve in the water (that is until you see sugar lying on the bottom of the saucepan). Remove the pot from the stove, let the liquid cool until it is just warm.

    2) Pour the liquid into a clean glass jar.

    3) Tie one end of a piece of heavy cord around the middle of a pencil.

    4) Place the pencil over the top of the glass jar letting the cord fall into the liquid.

    5) Crystals will begin to form in a few hours The next day, remove the cord from the jar, pour the sugar liquid back into the saucepan, reheat and cool it just as you did before. Pour the liquid back into the jar and reinsert the cord with the crystals into it. More crystals will form.

    6) If you repeat this procedure every day the crystal candy will grow bigger and bigger.

    7) When it has reached a size that pleases you, snip off any excess string and enjoy.

  2. INGREDIENTS:

    4 cups sugar

    1 cup water

    Food coloring

    Clean glass jar

    String, cut into 6-inch lengths

    Pencil

    PREPARATION:

In a medium saucepan, heat 2 cups of the sugar and the water. Do not boil! Stir until the sugar is completely dissolved. Gradually add a few drops of the food coloring of your choice and the additional sugar, stirring continuously until all the sugar is dissolved.

Pour the solution into a clean glass jar and tie the pieces of string to the pencil and suspend them across the mouth of the jar so that the ends hang into the sugar water.

Crystals suitable to eat will form in an hour and continue for several days to a week.

Pieces can be broken off and eaten after the first hour. (But, try to hold out for big crystals!)

Although you may see quick results in small measure, the larger rock candy crystals you're accustomed to seeing in the candy store will take some time to form

  3. Ingredients

    3/4 cups water

    3/4 cups sugar

    1/4 cups corn syrup

    Food coloring

    Flavoring

    A paper clip

    A string

    A jar

StepsStart a pot of water boiling on the stove.

Tie a piece of string around the middle of the pencil/stick/butter knife. The string should be long enough so that when the pencil is placed over the top of the glass, the string will come up just short of the bottom.

Wet the string with a little water and roll it in the sugar. Put the paper clip on the end of the string to act as a weight and help the string stay straight. Lay the stick over the top of the glass jar so that the string hangs down inside the jar, but not touching the bottom of the jar.

When the water has started boiling, remove it from the heat and let the water settle.

Stir in the sugar and corn syrup, 1 tablespoon at a time. Continue adding sugar until it starts collecting at the bottom of the pot and won't dissolve even when you stir. This will take a while and a good bit of sugar but not too much.

If you want to add flavoring or color, stir it in now.

Pour the sugar/syrup solution into the glass until it is about 1" from the top.

Place the pencil over the jar and allow the string to dangle into the solution. Don't let the string settle on the bottom or sides of the glass.

Place the glass somewhere that it can sit for a while undisturbed (but do not refrigerate it). After a day or so, you should be seeing crystal growth on the string.

Leave the string in the solution until the crystals are big enough for you or have completely stopped growing.

Remove the string from the glass and let dry.

After you let dry please wait until crystal is formed.

  4. Rock candy is a simple sugar candy that can double as a science experiment. The process can take up to a week, but it’s fun to watch the sugar crystals growing over time. Note that the exact quantity of sugar syrup you will use depends on the size of the jar you have. If you want to make several pieces of rock candy, use multiple jars and skewers, and double or triple the sugar syrup solution as necessary.

    Ingredients:

    2 cups water

    4 cups granulated sugar

1/2-1 tsp flavoring extract or oil (optional)

    food coloring (optional)

    glass jar

    skewer or thread (see below)

    Preparation:

    1. Prepare your materials: wash a glass jar thoroughly with hot water to clean it. Cut a length of thick cotton thread a few inches longer than the height of the jar, and tape it to a pencil. Place the pencil across the lip of the jar, and wind it until the thread is hanging about 1 inch from the bottom of the jar. Attach a paper clip to the bottom of the thread to weight it and ensure it hangs straight down. Alternately, you can use a wooden skewer as the base of your rock candy, and use clothespins balanced across the top of the jar to clip it into place.

    2. Wet your thread or wooden skewer, and roll it in granulated sugar. This base layer will give the sugar crystals something to “grab” when they start forming. Set the thread or skewer aside to dry while you prepare your sugar syrup.

    3. Place the water in a medium-sized pan and bring it to a boil. Begin adding the sugar, one cup at a time, stirring after each addition. You will notice that it takes longer for the sugar to dissolve after each addition. Continue to stir and boil the syrup until all of the sugar has been added and it is all dissolved. Remove the pan from the heat.

    4. If you are using colors or flavorings, add them at this point. If you are using an extract, add 1 tsp of extract, but if you are using flavoring oils, only add ½ tsp, and make sure you don’t stand right in front of the pan—the scent can be very strong as it rises in the steam. Add 2-3 drops of food coloring and stir to ensure even, smooth color.

    5. Allow the sugar syrup to cool for approximately 10 minutes, then pour it into the prepared jar. Lower the sugared string or skewer until it hangs about 1 inch from the bottom.

    6. Carefully place your jar in a cool place, away from harsh lights, where it can sit undisturbed. Cover the top loosely with plastic wrap or paper towel.

    7. You should start to see sugar crystals forming within 2-4 hours. If you have seen no change to your skewer or thread after 24 hours, try boiling the sugar syrup again and dissolve another cup of sugar into it, then pour it back into the jar and insert the string or skewer again.

    8. Allow the rock candy to grow until it is the size you want. Don’t let it grow too large, otherwise it might start growing into the sides of your jar! Once it has reached the size you want, remove it and allow it to dry for a few minutes, then enjoy or wrap in plastic wrap to save it for later.
